Mayonnaise Vs. Butter

Have you seen the debate about mayonnaise vs. butter when making a grilled cheese? I decided to decide for myself. After I put mayonnaise on the bread and put it in the pan it occurred to me that it is just basically cooking the sandwich in oil. Sigh. But I was already committed. But on the second piece I did at least salt the mayo/oil.
I am not going to argue with those who prefer mayonnaise over butter. I will remain quiet in my sadness that they are missing out on the yummy flavor that butter brings to any dish. Could be that the people who like mayo instead of butter have better mayo, but it has been a very long time since the eggs were replaced by oil as the main ingredient and other additives were added in the mayo we buy.
It was only a sandwich to be remembered because I will never want to do that again. There was a lot of oil left in the pan.
Do you have a preference for grilling grilled cheese?

I never even thought to use mayo. Butter is the Queen of all for me so phooey on mayo. Anyway, we make our own mayo, easy and much better than store bought. Also, I use ghee for a lot of things and would consider it for grilled cheese. I also make my butter some of the time.

There is a HUGE mayo (for grilled cheese) contingent that prefers mayo over butter. I don’t think I would have thought of it either, but have seen social media battles about it. I have always SAID I would make my own mayonnaise, but never have. Do you have to make it often? How long does it keep. Ghee is good to and something to make. Wonderful to see you here!

I forgot to address “Butter is the Queen of all.” I too LOVE butter. I realized I didn’t address that when I started to reply to another commenter who said she doesn’t like butter. Hmmmm . . . .

We’re a vegan household, so most of our ‘cheeses’ have a little coconut oil in them already, even if I make it myself. So we usually won’t add more. But we will add avocado or tomato! Good bread is important. And avocado oil makes a decent butter substitute when you want that crispiness. Never knew folks put mayo on their grilled cheese sandwiches.

I don’t like butter, so I just use a little olive oil in a nonstick pan. Works great!

Interesting. You just made me realize that I didn’t state my agreement with someone who stated “Butter is the Queen of all.” I tend to agree so I am surprised you “don’t like” butter. While olive oil will work to help crisp the bread, butter (if you like it, I suppose) adds another level of flavor. But again, I guess you have to like it. I always think of Julia Child who famously said, “With enough butter, anything is good.” 🙂 (PS: I’m still working on taking down my Christmas tree and decorations)

I usually toast the bread lightly first then butter both sides.
The put a generous amount of cheese often two types, to offer a contrast,
then place into a frying pan on a low heat (no oil though I might add a little more butter if I feel it needs it.
and patiently cook until the cheese has melted and the bread is toasted and golden brown.

Toast before grilling? Interesting! I use whatever cheese I have. If I have “fancy” cheese I may use that. I love the care in which you grill your sandwich. You have what I lack when making a grilled cheese – patience! Thanks for sharing.
