Popped Corn Toppings

What do you like to put on your popcorn? What is your favorite popcorn topping? I love popcorn and lately I have been putting a little bit of butter, olive oil, salt, and nutritional yeast. The butter gives it that rich flavor. The olive oil helps the nutritional yeast stick. The nutritional yeast gives it a nice flavor and adds a little bit of protein.

I have really been loving this lately. And it got me thinking . . . . there are so many things that can be put on popcorn . . . . I was wondering what your favorite thing is.

My husband doesn’t really like popcorn and I find that kind of surprising because popcorn is one of those things that I think of as EVERY ONE liking, but he doesn’t.

Banana Bread

The other day we had bananas WAY past their ripe stage, and recently whenever that happened I said I would make banana bread, but I have not.  This time I was determined to.  I went looking for my banana bread recipe and I found I did not have it, the one I talked about in my Blender Banana Bread post.  I thought I had it bookmarked but could not find it there either.  So I had to make it from memory with a little help from the internet.  I am not sure I have it right.  It is tasty, but I might need to do a little experimentation.

Here is what I did.

3 ripe bananas
1/2 cup butter (one cube)
2 eggs
1/2 cup brown sugar
1/2 cup white sugar
2 teaspoons vanilla
1 1/2 cup flour
1 teaspoon baking soda
1/2 teaspoon salt

Preheat the oven to 350° F.

Peel the bananas, putting the peeled bananas in a bowl.  Smash the bananas with a fork.  Cream the butter, sugar, and eggs together.  Add the vanilla.  Sift the flour, salt, and baking soda together.  Mix the flour mixture into the creamed mixture a little at a time.

Grease a loaf pan.  Pour the mixture into the loaf pan and bake for 55 minutes.  Check the loaf to see if it is ready.  Ovens vary so you might need to bake it longer.

I like walnuts in my banana bread, but my husband does not so much, so I didn’t put them in this time, but next time I will.  And one of these days, I’ll put chocolate chips in there.

Souper Easy Mushroom Soup

Dance Exercise, Nia, Nia at the City of San Jose, Nia classes in the South Bay, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia, Zumba, PiYo, Gentle Yoga, Nia at the YMCAI read a blog written by a man in France.  He writes his posts in French and English.  He owns and runs a Bed and Breakfast in France.  He takes fabulous pictures and posts a lot of yummy and interesting recipes.  One recipe he posted I couldn’t wait to try, but I had to.  When I read the post it was the week of Thanksgiving and I was going out of town so I couldn’t make the recipe.  When I got back I had forgotten about it, but he replied to my comment which notifies me so I was reminded.  I went to the store the next day to get the ingredients.  There are only two or three in his recipe (I added a couple more)!  It is so easy.  It is one of those dishes that tastes rich and fancy but it super simple.  The link to his post is here.  Do go to his blog and check it out.  As I was making this I realized his recipes are like mine or mine are like his — a guide.  Here is how I made his mushroom soup recipe.

I only bought two pounds of mushrooms because 1)  I thought that would be enough for my husband and I and 2) Mushrooms are $4.49 a pound and I didn’t want to spend $20.00 on mushrooms.  🙂  I also only purchased two shallots.  I thought I had one in my refrigerator but I didn’t so I only ended up using two.  Which was fine.  I also didn’t use any cream.  With his recipe he put a drizzle of cream on top or instructed how to blend it in.  I didn’t bother with the cream.  I am so glad I didn’t because the mushrooms and shallots are rich enough.  It was so yummy.  I am going to make it again this week.

I wash my mushrooms.  I know many chefs say to just dust them off, but . . . . I prefer to wash mine.

Mushroom Soup

Ingredients
(makes 4 servings)

2 large shallots, roughly chopped
3 tbsp butter
2 lbs mushrooms, quartered
1-2 cups white wine
1-2 cups water
2 tbsp chopped onion
2-4 tbsp shredded Parmesan cheese

Dance Exercise, Nia, Nia at the City of San Jose, Nia classes in the South Bay, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia, Zumba, PiYo, Gentle Yoga, Nia at the YMCAHeat a tablespoon of butter.  Once melted add the chopped shallots and a tablespoon of butter.  Cook the shallots, when they start to become translucent add the mushroom and the remaining tablespoon of butter.  Cook/brown the mushrooms.  Add salt and pepper to taste.  Add enough white wine and water in combination (whatever combination YOU desire) to cover the mushrooms.  Bring to a boil.  Lower the temperature to a simmer.  Simmer for 30 – 40 minutes.

Blend in a blender or with a stick blender.

Once blended, spoon/pour into bowls.  Top each bowl with chopped onions and Parmesan cheese.

Be certain that you blend the soup according to your blenders specifications — most instructions on blenders say to cool before blending.  I barely let mine cool because I wanted hot soup.  I have a Blendtec which heats the soup up while it blends.  So, blend and heat as is necessary according to your blender.  Stéphane’s recipe recommends garnishing the soup with mushrooms.  I know that presentation is a big part of serving dinner and he is really good at that.  For me, I am just happy to get a meal on the table and I rarely think of presentation.  You may be better at that than me so please — have at it.  I am convinced that the presentation — no matter what it is will be long forgotten once they taste this soup.  It is so yummy, they won’t care how it is served!

I am grateful to Stephane for posting such a simple recipe that is so yummy!  My husband really loved this so we will be eating it often.

Muscle Weighs More Than Fat

I think you have probably heard that before.  You might have even said it.  I know that I have.  It doesn’t make sense.  One pound of muscle CANNOT weigh more than one pound of fat, that is impossible.  A pound of something does not weigh more than a pound of something else.  Nope, just not possible.  Doesn’t matter if one pound is feathers and another pound is rocks. As you probably know, it is really about volume or the SPACE that one takes up over the other.  A POUND of fat actually takes up more space than a POUND of muscle, but they still WEIGH the same.  There is really no getting around that weight thing.

Sometimes a scale that measures weight might be a little deceiving in terms of size and health.  It all depends upon your goal.  Right?  I always say that, but it is true.  If your mainly concerned with how much you weigh then that is what you should focus on.  If you want to be smaller then maybe a scale is not the best way to measure that.  If you want to build muscle or be stronger then you might not want to be concerned with the weight because it is difficult to get weight to go down and muscle to go up.  Of course, this is all very general, I am not saying one is good or one is bad, I am really just trying explain the point a bit.

I find, on occasion, one of the best ways to explain something is to use a visual aide.  Here is a picture.

What you see is three pounds of butter with a three pound weight.  What is butter?  Fat.  I am using the weight as a rough sample of muscle.  This is three pounds of fat compared to three pounds of muscle.  Yeah, yeah, I know it is not exact, but it gives us a rough idea right?  You can clearly see that three pounds of fat take up much more room than three pounds of “muscle”.

If you are working out and exercising to “lose weight” your scale might not always tell you the accurate truth. Because first of all usually we are working out and exercising to lose fat and one of the best ways to do that is with strength training.  A muscled body burns more calories than a fatty body, no matter what the body is doing.  So one way to help lose the fat is to gain muscle.  But if you gain muscle the number on your scale might not go down as much as you think it should.  Second, if you are not doing some type of resistance training you would be losing muscle.

If you are doing something in your fitness routine that builds muscle and the scale is not moving down or it is not going down fast enough for you, don’t get discouraged.  Maybe it is time to take out the measure tape.  It could be that you are going down in size but staying the same or even gaining pounds.

Also remember that in order for you to actually build bigger muscles you have to follow a specific training plan so chances are you are not going to get bigger. Women – in general – don’t need to be concerned with that.  That is another great reason to measure because the body will change so it might look different or seem bigger to you, but with a measure of it, you will know.

Not too long before I hurt my foot I thought my scale was broken.  It kept showing me the same weight but my clothes weren’t fitting the same.  I threw my scale away.  Turns out it really wasn’t broken,  I was NOT gaining weight,  I was just losing muscle mass.  So now that my foot is better (better, not the same, but better) I want to get back to having more muscle.  I thought this would be a great way to remind me.  Sometimes I know things, I just need a reminder, what about you?  Do you sometimes need a reminder?  I am sure that you know that muscles DOES NOT weigh more than fat — not possible, but I thought I’d give us a visual to keep in our heads.
