Artichoke Chicken and Chickpea Pasta

Dance Exercise, Nia, Nia in the City of San Jose, Nia classes in the South Bay, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia, Gentle Yoga, Group Ex classes, YMCA, Zumba, Nia Technique, SJ City Fit, SJCityFitI have been out of town the last two weekends.  So our fridge is looking pretty bare.  I didn’t know what to cook for dinner tonight.  I didn’t want to go out to get something from the store.  I was thinking I could use chicken and add it to rice or pasta.  I was thinking I had a jar of sauce, but when I looked in the pantry I didn’t see one.  But I did see a jar of artichoke hearts.  I was thinking I would add them to the chicken.  Then I thought I would also use a can of chickpeas.  I love the richness that chickpeas adds.  So sometimes out of necessity you come up with an easy recipe of things you have on hand.

Artichoke Chicken and Chickpea Pasta

1 can of chickpeas/garbanzo beans
1 can of chicken
1 1/2 cups chopped artichoke hearts
3/4 teaspoon Nutritional yeast
Salt
Pepper
Garlic salt
Cheese*
Butter
Pasta

Dance Exercise, Nia, Nia in the City of San Jose, Nia classes in the South Bay, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia, Gentle Yoga, Group Ex classes, YMCA, Zumba, Nia Technique, SJ City Fit, SJCityFitDrain the chickpeas.  Rinse off the chickpeas.  Put the chickpeas in a large pan.  Turn the heat up somewhat high and let the chickpeas start to dry off.  When they start cooking sprinkle them with salt. Keep the chickpeas moving so that they start to get evenly toasted.  Add a teaspoon of butter.  Keep cooking the chickpeas.  Add a little more salt.  Let them cook more.  Then add some butter.  The chickpeas should be browning a little bit.  Cook the chickpeas to your desired doneness . . . I like them browned and starting to get a crunch.

Drain the chicken, then add it to the pan.  Sprinkle the chicken with garlic salt. Stir up the mixture and cook the chicken a bit.  Canned chicken is already cooked so it doesn’t need that long in the pan, or that high of a heat.  At this point I turned the heat down.

Add the chopped artichoke hearts.  Cook everything until it is hot.

Once the pasta is cooked to your liking, drain it, then put it on a plate with some butter.  Sprinkle 3/4 of a teaspoon of Nutritional yeast on the pasta.  Then put the chicken mixture on top of the pasta.  Add pepper if you would like and more garlic salt if you feel it needs it.  Grate a small amount of cheese on top.

*I would have liked to have used Parmesan, but all I had was a Cheddar Monterey Jack blend.

I think this was pretty good.  It is very rich with the beans and the artichokes.  It is super easy.  It was nice because the artichokes gave it a flavor that we don’t always have.  So it was a bit different for us.  I really liked it.

I was going to add some Kalamata olives, but I decided not to.  What do you think?  What kind of pasta would you use?  Now what do I do with the rest of the jar of artichoke hearts?

Chicken, Broccoli, and Cheese Casserole

Dance Exercise, Nia, Nia in the City of San Jose, Nia classes in the South Bay, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia, Gentle Yoga, Group Ex classes, YMCA, Zumba, Nia Technique, SJ City Fit, SJCityFitSo I wanted something easy to cook the other night and I thought it would be nice if I could use the broccoli that came in our latest produce delivery.  So what is easier than a casserole?  Not much.  So why not a chicken, broccoli, and cheese casserole!  So here is what I did, completely easy!

Chicken, Broccoli, and Cheese Casserole 

1 1/2 cup milk
1/4 cup flour
2 cans of chicken
1/4 of an onion
3 cups of chopped broccoli
1 tsp garlic salt
a couple of twists of pepper
1/2 of a bell pepper
2 1/4 cup shredded cheese
3 tablespoons butter
3/8 cup panko bread crumbs

Preheat the oven to 425° F.

Dance Exercise, Nia, Nia in the City of San Jose, Nia classes in the South Bay, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia, Gentle Yoga, Group Ex classes, YMCA, Zumba, Nia Technique, SJ City Fit, SJCityFitPour the milk into a large bowl.  Then put in the flour.  Whisk it together using either a whisk or just a fork.  Get all the flour lumps out.  Then add the chicken.  Chop the onion and then add it to the bowl.  Stir the milk mixture, the chicken, and the onion together.  Then add the chopped broccoli.  Add the garlic salt on top of the broccoli, then a couple of turns of a pepper grinder.  (Or as much pepper as you like.)  Then mix all the ingredients.  Chop the bell pepper, then add it to the bowl, then add 2 cups of cheese.  Then stir it all together.

Grease a casserole dish (I used a 8 inch X 11 inch), then pour or scoop the mixture into the dish.

Melt the butter and mix it with the panko bread crumbs.  Then mix in the rest (1/4 cup) of the shredded cheese.

Sprinkle the butter, bread, cheese mixture over the chicken, broccoli, and cheese mixture.

Then put the casserole dish in the oven and bake for 30 minutes.

Dance Exercise, Nia, Nia in the City of San Jose, Nia classes in the South Bay, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia, Gentle Yoga, Group Ex classes, YMCA, Zumba, Nia Technique, SJ City Fit, SJCityFitI was so intent on making the casserole, I didn’t make anything else.  I think I would serve it over noodles.  Or at least rice.  But, as I said, I didn’t think about it.  So we ended up using flour tortillas.  We put the casserole in the tortilla one bite at a time.  It was very good.

While some people might cringe at using canned chicken, I don’t.  A long time ago my father-in-law made a yummy casserole and when he said he used canned chicken, I thought, “Well, it was damn good.”  Now the brand you buy makes a big difference.  We buy the Cocsto brand.  Kirkland Signature™ Premium Chunk Chicken Breast.  It is just big chunks of meat.  We bought Swanson’s before and I think I ended up throwing it out.  It was . . . . not big chunks of white meat.  So I don’t trust any other kind.

I am sure that three cups of cut up cooked chicken will work.  But if you want to keep it really easy . . . use two cans.

Oh, I just had a thought, I might not be able to get my husband to go along, but crusty french bread.  This would be really good with crusty french bread.  Yum.  My hubby is not a french bread fan so I don’t usually think to serve things with bread, but this would be perfect with bread.

Easy Dinner – Yes, Please!

After I taught my Nia Class in Willow Glen I had some shopping to do.  After shopping I rushed home because I was going to meet a friend in the afternoon back the way of my class, but I thought would shower so as not to offend her.  It was pretty warm here.  As is normal for a hot day, the late afternoon early evening is the hottest.  So as I was driving home from my visit I was not looking forward to cooking dinner.  I had chicken thawed in the fridge, but what else to cook?  I ended up visiting longer than I had planned and getting stuck in traffic on the way home so I didn’t want to stop to get anything to add to dinner because it was already late.  All the way home I was wondering what to cook.  When I got home it was really hot.  I thought it would be best not to turn on the oven or the stove.  I had an idea that maybe using my electric skillet would be cooler.  I do believe it was.  Although this is a common dish cooked in a crock pot or the oven.  When you have limited ingredients sometimes dinner is really easy.  I have found that with limited ingredients I come up with come pretty good meals.  Some end up being regularly cooked meals.

Ingredients:dance exercise, Nia teacher, Nia class, one pot dinner, easy dinner, healthy dinner, meat veggies rice dinner

-A little over a cup of rice
-32 oz broth
-1/2 cup of sherry
-1 tablespoon of worchestire sauce
-1/2 tablespoon soy sauce
-1 tablespoon marjoram
-1/2 tablespoon powdered garlic
-two large chicken breast (skinless, boneless)
-bag of green beans
-salt and pepper to taste**

I put the rice in the skillet with about half of the broth and turn the skillet on to its highest setting.  I started to cut up the chicken into bite size pieces.  When most of the broth boiled off, I added the rest of the broth, the sherry, the worchestire sauce, the soy sauce and stirred, then I added the marjoram.  I turned the heat down to the lowest setting.  I finished cutting up the chicken, then put it in with the rice I sprinkled the garlic on the chicken with some salt.  I turned it to the middle setting.  I let the chicken cook until it was almost done, then I added the green beans.  I stirred them into the dish and let it cook until they were done.

If you know me, you know I don’t like pepper — at all.  But my friend gave me some smoked pepper, which seems very different than regular black pepper.  It helped finish the dish off perfectly!  I brought the grinder to the table though so we could pepper our food separately.  My husband loves pepper.

I wasn’t planning on posting about this so I wasn’t keeping track of the time, but I think it all took about 30 to 40 minutes.  That is what I will plan on in the future, but I will keep an eye on it to see.  I am looking forward to using different veggies.  Frozen green beans is all that I had.

The last time I cooked an all in one dish I used the oven and I used brown rice and canned soup.  The rice was a bit crunchy still but I didn’t want to cook it longer because the chicken was done.  So that is why with this one I started the rice first, although this time I used white rice and it could have been less done.

I am working my way away from using canned soup so that is why I used broth and it came out great.  With the oven cooked dish I used broccoli.  I am looking forward to trying different veggies in the skillet.

I had forgotten about the electric skillet even though my parents use theirs all the time.  I am glad it was hot and I was at a loss of how to cook dinner because now I am going to start using my electric skillet more often.

**09/10/11 — This actually made quite so we ate it a second night. On the third night it seemed as if all that was left was rice and green beans so I sauteed some baby bok choy and a can of chicken then put the left over rice and green beans in the pan and heated it up. Wow! I think I am a fan of baby bok choy!!!

09/12/11 — I didn’t take a picture while I was cooking it because I didn’t think of posting about it.  So the next night when we were having it for dinner I decided to at least take a picture of the food and the electric skillet, even though the food is on my dinner plate.  🙂
