Cranberry Pecan Chicken Salad

Many years ago, and I think I have shared this before, my father-in-law made dinner.  He made a chicken casserole and said that he used canned chicken.  I was not looking forward to eating it.  But if he had not told me the chicken came from a can I would have thought he used chicken breast . . . which of course you can do with this.  I am not always so good about remembering to take meat out to defrost so when I need something quick for dinner canned chicken is great.  Plus I like to use it for chicken salad.  Here is a chicken salad recipe.

Cranberry Pecan Chicken Salad

1 can of chicken
salt
2 tablespoons ricotta cheese
1 teaspoon mayonnaise
3/4 cup chopped pecans
1/2 cup cranberries
1 1/2 teaspoon balsamic vinegar

Drain the chicken then put it in a bowl, sprinkle salt onto chicken. Add the ricotta cheese and mayonnaise. Mix the chicken, cheese, and mayo together. Add the chopped pecans. Mix. You may want to pull the cranberries apart or chop them a bit. I find the stick together. Add the cranberries to the mixture. Add the vinegar and mix. Here is where you decide if you need to add more ricotta cheese or mayo. It depends on how dry you want the mixture.

Serve on crackers, bread, a spoon, whatever you want.

Since we got the cranberries I have made this twice so far.  It is really good.

Good Nut

Walnuts are awesome.  As you may have read in some of my other posts, my hubby doesn’t really like walnuts.  I find that fact rather funny because he likes pretty much everything, but he is not fond of walnuts.  One day I had a bag of pecans on the table and I was having some for dessert.  He grabbed a couple and ate them.  As he was eating them he looked at me and said something like, “What?  These are so good.  Why did I not know these are so delicious?  I am amazed!”  I actually laughed at his reaction to them because pecans really are very yummy.  They are rich and slightly sweet and he didn’t know the joy.  Walnuts are different and he doesn’t care for them.  I think walnuts are awesome.  The thing I like about nuts is they can be used in sweet or savory dishes, or even eaten by themselves.  Walnuts are a bit harder than pecans.  Pecans almost feel stale or old because they are kind of soft.  Walnuts are hard and they are not as rich, but they are very good and good for you.

Walnuts have Omega 3 fatty acids in them. You might have heard that Omega 3 fat is the fat that we need to consume.  Research has indicated that we don’t eat enough of it AND that it is a helpful and healthful fat.

My research has uncovered 1 ounce / roughly 28 grams has

190 calories
4 grams of protein
18 grams of total fat (1.5 grams of saturated fat and 2.5 grams of monounsaturated fat and 13 grams of polyunsaturated fat)

4 grams of carbohydrates
2 grams of fiber
28 mg of calcium
.82 mg of iron
125 mg of potassium
11 grams of Linoleic acid
2.5 grams of Linolenic acid

The Linoleic acid is the Omega 3 essential fatty acids.  And it is the Omega 3 that we want.  Omega 3 is considered an anti-inflammatory.  As I have mentioned in numerous other posts, anti-inflammatory foods are a welcome part of a healthy diet.  With more and more research pointing to the association between chronic inflammation in the body and disease, it is a good idea to consume foods with an anti-inflammatory effect.

According to the World’s Healthiest Foods site:  Research has shown walnuts to help with cardiovascular health.

They have been shown to decrease LDL cholesterol, decrease total cholesterol, and increase omega-3 fatty acids in red blood cells.  Also decrease the risk of excessive clotting and excessive inflammation.

For me, as I mentioned they can be eaten in savory dishes, like with green beans (click here for a green been recipe) or in sweets.  I like to put walnuts in my banana bread, but I don’t because John doesn’t like them and I primarily make the bread for him.  But I do put them in the Banana Oatmeal Walnut Cookies (click here for that recipe).  He actually is ok with them in the green beans and the cookies.  I also think they are a great snack or dessert.

Pecans – A Rich Treat

PNia Teacher, Nia San Jose, San Jose Nia, Cardio Workoutecans are so rich they are like a pastry.  Full of fat and sweetness.  As you can see the nutritional facts are:

20 g of saturated fat
0 g cholesterol
0 mg sodium
4 g carbs
2 g dietary fiber
3 g protein

So as a dessert they are great, with 0 cholesterol, 2 g of saturated fat, and 0 sodium.  One fourth cup makes a great treat.  They have a natural sweetness that could assist in curbing the desire for sugar.

According to Power Your Diet, pecans contain monounsaturated fatty acids (which are said to assist in the reduction of  low-density lipoprotein (LDL) cholesterol).  They are a source of antioxidants.  Antioxidants are thought to help in the fight against certain diseases.  Studies have shown that antioxidants help protect against cell damage.  Cell damage is thought to be the cause of diseases such as some cancers, Alzheimer’s, heart disease, and Parkinson’s.

Pecans have many phytochemicals. Phytochemicals are presently believed to help reduce the risk of cancer.  As with many foods it has to do with fiber and their anti-inflammatory properties.  Medical research is proving that chronic inflammation is associated with many diseases.  It is not good for the body to remain in a state of chronic inflammation.  Foods that have anti-inflammatory properties can serve as a great addition to many diets.

Pecans have a large group of the B vitamins (thiamin, riboflavin, niacin, vitamin B6, Folate, and pantothenic acid) and also contain minerals such as iron, calcium, iron manganese (which is different from magnesium), magnesium, zinc, potassium, and selenium.

Also, pecans have proved in studies to help lower total cholesterol by over 10%, and the “bad” cholesterol (LDL) by OVER 15%.

And I don’t know about you, but I love pecans.  I can eat them plain, just a handful all by themselves.  Or they make a great addition to a salad.  The salad can be a combination of sweet and savory or just full of veggies.  They also make a great addition to cookies.  Lately – since I have a huge bag of them (I bought a wholesale bag . . . two pounds) I add them to cookie recipes that call for walnuts.  I actually think of them as interchangeable and use them in place of walnuts when I have a bag of pecans and not walnuts.

Pecans with a salty soft cheese makes a great appetizer.  The mixture can be spread on crackers, bread, or can be used to fill celery.  If you mix some chopped nuts with a crumbled cheese you can put it in lettuce boats.

They can add their buttery goodness to any recipe.  Because they add a flavor of buttery richness it is possible to cut down on the butter or added fat when you add them to a recipe where butter is just used as flavor.  They can be chopped and used as breading for chicken or pork  I like to use a mixture of shredded parmesan cheese and pecans to bread pork.  It can be cooked in the oven or cooked in a pan.  Either way, the butter taste from the pecans adds a decadent richness.

In their chopped form they can also be added to a chicken salad.  Than can be added to your regular chicken salad recipe or substitute, pecans and apple for the celery and onions.  Sometimes I crush some to coat the outside of the sandwich when I am making chicken/pecan sandwiches for a tea.

Nuts contain a high amount of fat but all of the additional health benefits they supply make them the perfect desert.  A little cheese and honey or jam — ahhh.  So much more satisfying than a package dessert full of chemicals.
