What’s On Your Grill?

Summer is almost over. What are you favorite BBQ/grilling foods? Last night while my husband was grilling some steaks I had him cook some potatoes and zucchini. So easy. We have a bag of very small potatoes, about the size of a boiling onion. So I just cut the “large” ones in quarters and the smaller ones in half and put them in an aluminum foil “packet” with some onions, oil, garlic salt, and season salt and he grilled them for about 45 minutes. They were delicious.
Another thing I love is grilled bell peppers filled with feta. I am sure I have mentioned them multiple times because they are so good.
I didn’t take a picture of the potatoes in their packet, but snapped my plate afterwards.

We live in an apartment overlooking forest, BBQs and grills are forbidden because of the fire risk.

There are a lot of cons to living in an apartment, not being able to grill is not one of them. 🙂 But . . . just because you can’t grill anytime you want doesn’t mean you can’t have a favorite. Ever go to a friend’s and have a bbq?

I have friends who love to BBQ but I eat a largely plant-based diet and while one can bbq veggies, they tend to overcook.

Oh, fruit and veggies on the grill are fabulous. Bummer that they overcook. I have noticed that often times overcooking – at parties – is largely due to inattentiveness. The person manning the grill is also socializing. Perhaps a suggestion of helping could ensure your veggies don’t get overcooked? Sad to miss out on such deliciousness.

That’s a good idea but it’s usually one of the guys doing the cooking and they get very territorial about their grills!

Agreed and understood. I don’t actually grill because “that’s my husband’s job.” But I do know some women who grill . . . so I thought I would offer a suggestion. 🙂

I found a great recipe in Eating Well recently. I placed corn (chopped up in quarters ), small potatoes (chopped), andoulile sausage, shrimp that have not been pre-cooked, a little olive oil and old bay seasoning. Make 4 little silver foil packets and place on grill for 15 minutes, turn half way through the cooking process. It is so yummy. If you don’t have a grill, this works well on a George Forman grill too.
