Chicken IN Biscuits

Here is another “IDEA Recipe” as I didn’t write down the measurements when I made it. It was pretty good. It was just biscuits split in half and rolled out a little bigger, then “stuffed” with chicken. More accurately the chicken was sandwiched between the two biscuit halves then sealed. Since I was just experimenting I was making it up as I went a long and didn’t make notes. And I started with just splitting the biscuits, but then realized I wouldn’t be able to put a lot of chicken in them so I split them then rolled each half to make it larger. I was able to put more chicken in the larger ones.

I used

Canned chicken
onions chopped
bell peppers chopped
corn
seasoning

a tube of biscuits

some cheese

It may surprise you as it surprised me, I didn’t put any cheese IN the mixture. I sprinkled a little on top.  I keep wondering what I was thinking.

I cooked them according to the biscuit directions (350° F for 20 minutes) maybe given them a little more time until they were browned. The chicken is cooked so that wasn’t the concern, I just didn’t want soggy biscuits.

As usual I started cooking late thinking it would be a quick throw together kind of thing and it was not so I didn’t even take any pictures when they were plated. It was yummy and was enough for a couple of meals. You know me I love when I cook and it makes more than one meal.  This was easy to make, but I had not planned on the time it took to roll out the biscuits (which wasn’t that long, but it added time to what I had planned).

This is just a twist on a few of the things I have done with those biscuits I love.

Kitty Beans

When I took this I thought it was cute.  Just now when I went to post it I thought they looked like beans or half moons.  Then I realized they were kitty beans.  Ha, ha, ha, what?  Just me?

Sweet Bouquet

Flowers. Yay! I love flowers. It has been a bit since I got flowers from my hubby, so these were extra special.

As I am posting this he is “processing” some yard roses for the house.  (Trimming, debugging, finding vase(s), etc.)  More yay!

Foam Rolling, It Does A Body Good

I have to just preach a quick moment. Foam rolling. You ever do foam rolling? Well, I only do it when I am so sore that I cannot walk well. And then that means it hurts a lot. I am not going to fib and say it doesn’t hurt, because it does. I believe that the idea is not to CRUSH the muscle but to massage it so it is important to carefully control the pressure. This post is not instructions on how to do it (I have a few posts on foam rolling), it is just a proclamation that if your muscles are sore from a workout you could probably benefit from foam rolling.

I was very sore this past week and I thought, “Hmmm, I should do some foam rolling. UGH, but it hurts so much. Well, it hurts because you only do it when you are already in pain . . . but you are going to do it.” And I did and I felt so much better.

I also realized another reason I don’t like to do them (foam rolling classes) and I adjusted that. There is some instruction that has the movement break down the leg in top-bottom so it is a lot less work rolling the leg. There is other instruction where the movement is the entire length of the thigh. I realized that is too much for my already sore arms/shoulders so I just broke it down. Now that I have that bit of knowledge I will just do that all the time and probably end up doing foam rolling more often.

Black Cat, Green Eyes
