Broccoli Salad

Sometimes I just can’t believe that I have not posted about something before.  I guess, I assume I posted about it so then I don’t post about it.  Crazy.  Then I look for it on my blog and it doesn’t come up.  I have to say that the “search” feature on this blog is very odd.  I can type in the exact phrase I am looking for and the post not come up.  Then I can type in another search and the one I was looking for originally will show up in the second search.  I kind of think of it as a crap shoot.  But I have searched for this recipe over and over again and I cannot find it.  So I am going to post it.  One thing that I think is funny about this recipe is that once I was going to go to a potluck and we were asked to bring a vegetarian side dish.  This is the first thing that popped into my head.  So when I go to make it I realize that it has bacon in it so that would disqualify it as vegetarian.  And then I laughed because I forgot to get the bacon anyway.  Of course, had I remembered to get the bacon I would not have put it in because just leaving it out makes it perfect for vegetarians.  The last time I made it I ended up using a lot of broccoli so I decided to add more of everything else and I ended up with too much sugar, too many raisins, and not enough bacon!  Also, it didn’t help that I didn’t put on enough salt.  Many people who don’t like broccoli claim to like this salad.  This is a recipe that a friend introduced me to, so I call it her salad, but I didn’t get her permission to use her name so I am just calling it Broccoli Salad.

I have adjusted the recipe better fit the proportion of broccoli.

Broccoli Salad

Two large bunches of broccoli
6 slices of bacon
1 1/2 cup mayonnaise
1/4 cup sugar
4 tbsp vinegar
1 cup chopped red onion
1 cup golden raisins
3/4 cup (shelled) sunflower seeds

Wash the broccoli.  Cut the broccoli into bite sized pieces.  Cook the bacon.  Drain the bacon.  If you are one who uses a paper towel on the bacon to help sop up the grease, do that, too.  Chopped up the bacon.  Once the bacon is chopped up it will be about a cup.

Mix the mayonnaise, sugar, and vinegar together.  Then pour it over the broccoli.  Then mix in the chopped onion, the raisins, the sunflower seeds, and the bacon.  Add salt and pepper to your own tastes.

This salad is nice served chilled, not cold, but chilled.  But it is also ok to be room temperature.

You can use regular raisins or even dried cranberries if you want.

I have only made this a couple of times and my husband loves it.  My friend, the one who gave me the recipe, says she makes it all the time.  I can see why.  It is very easy and it is very tasty!

Banned Foods

You might have noticed that everything I do is on my way home from teaching Nia.  It is true, I tend to run my errands after my Nia Classes.  I am out, so it is easy to just stop to pick up what we need.  Two issues with going to a store after I teach 1) I usually look akin to a drown rat with my sweaty limp flat hair and 2) I am usually hungry.  I am one of those people who should not go shopping when they are hungry.  I end up walking down the aisles where dinner ideas start popping in my head.  With menus forming into my head as I am shopping sometimes I end up backtracking and going on all over the store.  By the time I get all that I need I am really hungry.  There are a lot of foods that I don’t even bother bringing in the house.  I work hard not to eat the “junk food” but sometimes when I am hungry and it is there, I will eat it.  Therefore some things are “banned” from being in the house like potato chips, ice cream, candy, cookies, and stuff like that.

There is no need for that stuff to be in the house.  But there are other things that aren’t necessarily “junky” foods that become unhealthy when you eat the whole bag or box. Two such foods I should really just keep out of the house are sunflower seeds and cereal.  You know I love sunflower seeds because I have posted about them.  I love them.  I can eat a whole lot of them.  There is a lot of fat in sunflower seeds so eating a lot of them just adds a lot of extra fat.  They have 17 grams of fat in 1/4 of a cup.  Extra nutrients are not good.  Not matter whether it is fat, protein, or carbohydrates.

The cereal is Kashi 7 Whole Grain Honey Puffs.  I think these things are like Super Sugar Crisps.  Remember that cereal.  I love cereal but I know it is not really a healthful food.  For one serving this cereal has 1 gram of fat, 80 grams of potassium, 25 grams of carbs, 2 grams of fiber, and 3 grams of protein.  So it is really something that should be considered a treat.  To me it is just like a desert.  (Hanging my head) I eat it like I will not be allowed another meal.  This is a confession here people.

I just need to NOT buy this cereal.  Every time I buy it I do good for a day or two and then–whoosh, it’s gone.  I know this, but when I go shopping after Nia I am really hungry and I think I can eat it as I believe it should be eaten, as a treat, maybe every other day and according to the serving size, but I never manage that.  I need to just not buy it.

What about you?  Is there a food you think you are better off just not having in the house at all?  Is it a snack food?  Is it something that might be considered somewhat healthy when eaten in the proper portion?

Sunflower Seeds

I love sunflower seeds.  I love them on my salad.  That is usually how I eat them recently.  I used to shell them, now I just sprinkle the already hulled ones on my salad.  According to the package I have right now they are pretty high in fat.

1/4 Cup has 17 grams of fat

—Calories 200
—Cholesterol 0 mg
—Sodium 135 mg
—Carbohydrates 8g
—with fiber at 3g
—Protein 7g

Someone on Facebook said that she read that they help people suffering with allergies . . . . sneezing and itches.  I eat sunflower seeds so I don’t know that this helps me, but it might help others.  From what I am seeing on the internet, it is the Omega 3 in the sunflower seeds that might be the reason for help because that particular fat helps with inflammation.  Which, if you are an allergy sufferer, you know inflammation is a symptom of allergies.

Sunflower seeds are a good source of magnesium and it helps reduce the severity of asthma. It also helps prevent high levels of histamine in the blood. A quarter cup of sunflower seeds provides 31.9% of the daily value for magnesium.  Sunflower seeds are very high in vitamin E and vitamin B.

Sunflower seeds also might help enhance the immune response because of the phytosterols.  Allergies are just the body’s way of fighting off substances that are bothering it.  So this could be another reason they are thought to help.

I couldn’t find the article that said specifically that sunflower seeds help.  I just found a lot of information that states what they contain, so to me that can point to possible allergy relief.

They are pretty high in fat so it is important to keep that in mind when including them in your diet.  Do you like sunflower seeds?  If you do, do you just eat them plain or do you add them to recipes?
