Mexican Chicken Salad

Dance Exercise, Nia, Nia in the City of San Jose, Nia classes in the South Bay, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia, Gentle Yoga, Group Ex classes, YMCA, Zumba, Nia Technique, SJ City Fit, SJCityFitWe recently went through an extremely hot spell. This is the San Francisco Bay Area, so we are not really accustomed to having EXTREMELY hot weather. Many homes in this area don’t have air conditioning. Most often when we do have hot days, we get cooler nights so it makes the hot days somewhat bearable because the night air has cooled everything down. But with this last heat wave there was no reprieve from the heat of the day at all. So it was hot and it stayed hot for days. Record breaking temperatures were recorded all over. So the idea of making dinner was really unappealing. And the idea of using anything that created heat was just unthinkable. I was trying to come up with something we could eat that wouldn’t require heat at all. The only thing I could think of was Chicken Salad. Now this was all I could think of without me having to go to the store. But I thought that was kind of average because when I make chicken salad I use mayonnaise, pickles, and garlic salt. Not just that, but that is the basic idea. But I wanted a different flavor. I was thinking I could give it a Mexican flavor and we could put it on a tortilla with a little cheese and salsa on top. Had we had avocado and sour cream that would have gone on top, too, for my hubby. So here is what I came up with.

1 can of chicken
1 can of corn
1/4 cup of chopped white onion
1/4 cup of chopped red onion
1 teaspoon minced garlic
2 teaspoons garlic salt
1 teaspoon coriander
1 teaspoon cilantro
1 teaspoon cumin
Sprinkle of pepper
Half of a green bell pepper
– – – –
2 teaspoons white vinegar
2 teaspoons lime juice
Flour tortillas
Shredded cheese
Salsa

They didn’t even need the rest. But it was good all together.)

Chop the bell pepper. Mix the chicken, corn, onion, garlic, garlic salt, coriander, cilantro, cumin, pepper, bell pepper vinegar, and lime juice together. Let it chill for at least an hour, to let the flavors meld together a bit.

Then spoon the mixture onto a flour tortilla and top with shredded cheese and salsa. Roll it up to eat it like a burrito.

As I said, if you have avocado and/or sour cream you could put that on top.

I did not go to the store so I used dried cilantro. When I make this in the future I am going to use fresh cilantro and I think that will make a big difference flavorwise. I was kind of flying by the seat of my pants because it was just too hot. Too hot to go to the store and too hot to create heat and cook.

I like this because it is chicken salad without mayonnaise. So this means we can have chicken salad twice as often because it won’t be the same ol’ same ol’ chicken salad.

This was even better two days later when the flavors REALLY had time to settle in. So you can make it a day or so before you want to eat it.

Do you like chicken salad? What do you put in your chicken salad?

Beautiful Macaw

Posted by terrepruitt on September 8, 2017

In California we have to get our cars “smogged” or “smog tested”. That is what we call it. There are hundreds of places all over in my area and they all say “Smog Check”/”Smog Test”. Other states might know it as emissions testing. We just call it smog. Well for some odd reason . . . we can all guess why . . . there are times when you might have to get your car tested at a “SPECIAL” smog place. They call it a STAR station. So the state decides that you have to go to a STAR station to get tested instead of “regular” testing place. Thankfully they are just as convenient as regular ones, but I have a guy. I go to him every time I need to get my car smogged. And every year he says, “Your engine is so clean.” And I am on my way in less than 20 minutes. But this year I had to go to a STAR place. They were super nice and just as efficient. And they had a bird. I think his name was Robbie. He was a beautiful parrot. He was so funny. He was showing off when I was taking his picture.

So today’s Friday Photo is the San Jose Star Smog Check Station’s parrot Robbie.

A Cool Way To Sleep

Posted by terrepruitt on September 6, 2017

I really think that my body’s temperature is higher than everyone else’s. Not my temperature so much as the way I feel. Maybe not EVERYONE, but most people. When people tell me they are too hot to sleep I share with them I sleep with a bag of ice and they look at me as if I am insane, when to me, since we don’t have air conditioning, that is the ONLY way I can get to sleep and stay a sleep.  I wrote a post about what I did before we were in a drought, Relief From Too Hot To Sleep, but with the drought I thought I shouldn’t waste the water so I started putting ice in a baggie and sleeping with it. People ask me a lot of questions regarding that so I thought I would answer them here. First of all I put the ice in a zip lock sandwich bag, then I put that in a big zip lock freezer bag. I have no fear of it leaking, but then if it did, so what? It is only a little baggie full of water. I am sure some beds get a lot more liquid on them than that.

So the most common questions have to do with leaking.  Does it leak?  Aren’t you afraid it will leak? No. I double bag it and even if it does, I am not afraid of a little water on my bed.

Then there are the questions about why your feet? Well, have you ever had a bag of ice pressed up against your chest? Even when it is really hot having a bag of ice on your chest is REALLY cold. Same thing with my back or arms. What do people often do when they want to cool off? They hang their feet into a pool. Also putting the bag of ice at the end of the bed by my feet allows me to easily move away or close to the ice. Whereas if it were at my mid-body it is more difficult to move away or closer to. Feet are easy to move. I don’t even have to move my body. I can put my feet on the bag of ice then when it gets too cold move them off, then back on, then off. It is a great way to regulate the amount of cold. Sometimes I use the towel or a sheet as a buffer between the bag and my feet.

Does it melt? Well, most of the time yes. Especially if it is really hot and I have had my feet on it most of the night. Usually when I wake up the water in the baggie is room temperature. A couple of time it has still been cold. A couple of times I have pushed it off the bed. (It didn’t break or leak. It was just on the floor next to the bed.)

Over this last heat wave I have gotten up in the middle of the night to replace the ice. Granted when I do that I am half asleep and I don’t use the water to water my plants like I would normally do when emptying the bag.

Dance Exercise, Nia, Nia in the City of San Jose, Nia classes in the South Bay, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia, Gentle Yoga, Group Ex classes, YMCA, Zumba, Nia Technique, SJ City Fit, SJCityFitDuring this last heat wave, not only did I get up in the middle of the night to get new ice, I also bagged some cooler chillers (I don’t know what they are called).  This is a great thing to use if you are wary of a bag of ice leaking. They will not leak. I was so hot I grabbed two of them and put them in a bag and I did have them rest between the back of the couch and my back. And a couple of days I did embrace them . . . but that was after they had been out of the freezer for a little bit and they were not completely frozen, but cold enough to cool me down.

I prefer the bag of ice because it is more malleable and it can conform to my feet. The ice packer/cooler chiller things are just straight, they don’t bend so it doesn’t get my whole foot cold. Only the little portion that is resting on it gets cool. But, they don’t have any leakage risk involved, so that might be good for some.

Anyway, it was so hot, I haven’t slept upstairs in a week. The bag of ice and the ice packer allowed me to sleep downstairs on the couch. I thought I would share it again and the idea of the ice packer/cooler chiller things because I think we might have some more hot weather to come.

What did you do to keep cool?  Were you able to get any sleep?

Pretty Card

Posted by terrepruitt on September 1, 2017

Sometimes I take pictures of things that I am going to get rid of. I don’t even think this was my card. I think it might have been given to my dad when my mom died. I don’t even remember. But I thought it was really pretty. I don’t think you can tell from the picture how pretty it was but . . . I am posting it anyway. One of those things that is pretty so you just snap a photo of it.

A pretty card for today’s Friday Photo.

Hubby’s Moscow Mule Recipe

Posted by terrepruitt on August 30, 2017

Ever since we fell in love with Moscow Mules I have talked to a few friends and we were all under the same belief: Moscow Mules have a lot of ingredients and are complicated to make. But ever since we fell in love with Moscow Mules my husband did research so we could make them ourselves and they do not have a lot of ingredients and they are not complicated. They only have four ingredients and one of them is ice, so that could not even count! As with many things – maybe all recipes – you start with a basic and then figure out what works best for you. So with our 16 ounce mugs my husband as decided upon the following recipe.

Moscow Mules

3 shots of COLD vodka
1 cup of cold ginger beer
1 ounce of lime juice
ice

Fill the shaker with ice.  Measure and pour all of the ingredients in a shaker. Then shake. Serve the cocktail in a chilled copper mug!*

How you make it also depends on the ginger beer you buy. At first I bought Fevertree and loved it. When I bought Bundaberg, it was too spicy for me. But then, one time the store was out of Fevertree so I bought Bundaberg again and it was too sweet. I bought Fevertree again and it was not gingery enough. I really think that the ginger beer is not an exact science . . . . at least from the batches of beer I have bought because they are never consistent tasting. Regardless, my first choice is Fevertree. In my post about ginger beer not having alcohol Stoli’s ginger beer is pictured. I just tried that because they were out of Fevertree. I won’t be buying it again. I like the other choices better.

I was just having a conversation with a friend who thought they were complicated to make — I don’t know where we all got that idea — so I told her my hubby’s recipe. There you have it. Easy peasy. If you ever wanted to try making a Moscow Mule now you know how easy it is.

Very tasty and very refreshing in the heat.

Cat Calendar

Posted by terrepruitt on August 25, 2017

My friend bought me this because she knows I love my cats. It was a super cute calendar. As you can see it was for 2016, so I enjoyed it while it lasted. I kept it on my desk for a long time then I finally needed the room and had to get rid of it. But I was so happy to run across this picture. So cute!

A cat calendar is taking up real estate for this week’s Friday Photo.

Spot And Her Boyfriend By J

Posted by terrepruitt on August 23, 2017

Last week my husband says to me out of the blue, “Do you know who I have been missing lately?”

I said, “No, who?”

He answered, “J. I’ve been missing J. I have been thinking about her and I think I need to get together with her.”

And I said, “Well, I miss her too, the last time we had plans with them they had to cancel. So I would like to see her, too.”

Ha. I believe this was his plan all along. Well, maybe not ALL ALONG, but I bet from the finish of the project. You see, my husband commissioned “J” to do a piece of artwork as a gift for me. So he made plans for us to go to lunch today. And he had me open my gift at lunch.

This is our cat, Spot. We used to say that she had a squirrel boyfriend. There probably was more than one, but I can’t always tell them apart. There was one that used to come up to the sliders and visit with Spot. That is how it seemed. He – and I can’t swear by that either – used to come up close and just chatter at her. And she would sit there with big eyes just looking intently. Sometimes she would glance at us as if to say, “Do you believe that? Do you hear what he is saying?” Sometimes he would just stay on the fence and chatter at her. His chittering going along with his butt. He had a butt dance going on.

She had many yard animal friends.

The print is super cute and it is framed and matted very nicely, but I am not a photographer.  I didn’t want a reflection of myself taking the picture so I took it at an odd angle and didn’t get the entire thing (frame and matting).  The colors are not showing up as nicely in the photo as they are in the actual print.

J is quiet the artist. In fact you may have seen her work . . . it makes its rounds on Facebook ALL the time. Those of us that love her come together to make sure that she gets credit for it. Many know her by J although her website is Judy Clement Wall. While I have purchased and sent many of her cards, now I am the proud owner of a one-of-a-kind commissioned art piece by JClementWall. Made that much more sweeter because my hubby commissioned it for me AND it is a reminder of our sweet angel.  And what, but a totally personal doodle would have my cat, her boyfriend, and a hummingbird in it, with a blue background (which could be coincidence).

Pretty cool, huh?

Thanks, Honey. Thanks, J.

Tell Me About Your Eclipse Experience

Posted by terrepruitt on August 21, 2017

So I missed it. The solar eclipse. The whole thing. It just seemed like a regular summer day, as in the sky was somewhat hazy. I am sure you already know the difference between a SOLAR eclipse and a LUNAR eclipse is a solar eclipse is when the New moon moves between the sun and the earth, blocking the sun and a lunar eclipse is the earth casting a shadow on the full moon. The next solar eclipse we will be able to see in the United States is in 2024 and it won’t go across the ENTIRE United States like today’s did. It looks like it might be in Arizona, New Mexico, and/Texas and the go up and east from there.

Time and Date has a lot of information on eclipses.

So many people traveled to different states and different locations to see it. I didn’t even look out my window. I was, too busy try to keep my little cat from looking outside. I didn’t want to end up with a blind cat.

There were people and places (businesses) having eclipse parties. There were a lot of places that were cashing in on the whole thing.

Since I missed it, I would love to hear your 2017 Eclipse story.  So what is your story? What did you do? Do you have any pictures?

I Asked For Help To Help

Posted by terrepruitt on August 16, 2017

I am shipping out the first batch of coupons this week! You may have seen my post I’m Clipping Coupons, Want To Join Me? about how the military personnel and their families can use expired coupons overseas. There is a program called Troupons which involves collecting and sending MANUFACTURERS COUPONS overseas so that people in the military and their families can use them to help stretch their dollars. I learned about it when I came across Cheryl Wright’s post Overseas Military Coupon Program. She has kindly offered to accept coupons then forward them on to the Troupons program. Because, if you don’t know, cutting out coupons takes a long time. First you have to make sure they are the correct coupons (MANUFACTURERS COUPONS) then you have to cut them out. Then separate them into the correct categories, then separate them into expiration date piles. Originally when I posted my post saying I was going to send her coupons, I didn’t have that many. I don’t get many coupons.  I don’t get the newspaper and that is where the bulk of MANUFACTURERS COUPONS come from. But I realized that there are a few Nia and yoga students that actually get a newspaper and they would have access to coupons. So I asked my students for help collecting coupons to help people in the military overseas.

Dance Exercise, Nia, Nia in the City of San Jose, Nia classes in the South Bay, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia, Gentle Yoga, Group Ex classes, YMCA, Zumba, Nia Technique, SJ City Fit, SJCityFitMy students came through.  They are helping by cutting out coupons. They have brought me enough that I can sent a batch off to Cheryl. I have separated them into three categories: Non-food, food, and pets. I am going to leave the expiration date sorting to her because she will have a better idea of when the coupons will get to the program. At this time most of the coupons are NOT expired, but by the time they get overseas they will be, but hopefully they will be in the acceptable time frame.

I am so grateful for my students contributions. I really wouldn’t have had enough to send to feel like I was contributing, but with their help I think we are making a worthwhile contribution.

The non-food coupons make up the bulk of the coupons. I am sure that there are plenty of uses for many of them. There are coupons for hair dye, shavers, allergy medicine, probiotics (in many forms), heart burn medicine, and more.

I am just fascinated by this whole program. I love that coupons can help the military overseas. I think that is amazing. I appreciate the people that work to make this happen. So thank you to my students. Thanks for taking the time to cut out the coupons and bring them to class. Thanks to Cheryl for volunteering to get the coupons to the program. And thanks to the program organizers for doing it all.

I think that cutting out coupons and sending them in is an easy way to help out those that are making sacrifices for us.  If you are interested in learning more about the Troupons program click here. If you are interested in sending your coupons to Cheryl click here.
