Cauliflower Cake

So yummy.  My friend posted on Facebook that she had to explain to her child that the Cauliflower Cake she made for dinner was a savory CAKE, not like a birthday cake.  She said it was a recipe from Ottolenghi.  Of course I Googled it and I was intrigued.  Then I noticed that a head of cauliflower was to be delivered in our produce box so I thought, ok. Dance Exercise, Nia, Nia in the City of San Jose, Nia classes in the South Bay, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia, Gentle Yoga, Group Ex classes, YMCA, Zumba, PiYo, Nia Technique, SJ City Fit, SJCityFit The challenge according to the posted recipe was finding the nigella seeds, but I think Amazon meets each and every challenge with a “pppprrrruuuuuf”.  I ordered both the white sesame seeds and nigella seeds online and had them before my scheduled produce delivery.  The recipe noted you can use black sesame, black cumin, or onion seeds instead of the nigella/black caraway seeds.

I altered this recipe because I used the head of cauliflower I had and did not specifically shop for a small one as the recipe called for.  I also could not bring myself to use the 5 (FIVE) tablespoons of olive oil that the recipe called for.  I put two in the pan and almost stopped there, but decided to go with three . . . which I think was PLENTY!

I don’t like biting into rosemary stems so I had my husband grind them.  He used a mortar and pestle and he does an excellent job making them fine and powdery!  I also used SHAVED cheese instead of shredded Parmesan, and it was actually a Parmesan/Romano blend.  I like how there is more cheese in a bite that way . . . but I am sure either is fine.  The recipe called for unsalted butter, which I bought once for a recipe a long time ago and will not be doing that again.  So I used regular butter.

Since I use my blog as my recipe book I put my ideas for next time I make this in the recipe below in asterisked italics.  That way I don’t have to continue to scroll down to check what I want to do different and I won’t forget because it will be right there.)

This is what I did, which is an adaptation of Yotam Ottolenghi’s recipe I found on thekitchn.com

Savory Cauliflower Cake

(Serves 4 to 6)

1 cauliflower head, cut into pieces (not small pieces, about an inch big)

1 medium red onion

3 tablespoons olive oilDance Exercise, Nia, Nia in the City of San Jose, Nia classes in the South Bay, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia, Gentle Yoga, Group Ex classes, YMCA, Zumba, PiYo, Nia Technique, SJ City Fit, SJCityFit

1 teaspoon rosemary leaves (which I had my hubby grind up for me)

7 large eggs

1/2 cup basil leaves, chopped **use more**

1 cup all-purpose flour, sifted

1 1/2 teaspoon baking powder

1/3 teaspoon (heaping) ground turmeric **1/2 to 1 teaspoon**

1 1/2 cups shaved Parmesan or Parmesan/Romano

Melted butter, for brushing the sides of the pan

1 tablespoon white sesame seeds

1 teaspoon nigella seeds (also known as black caraway)

1 1/2 teaspoon salt  **to 2 teaspoon**

black pepper (to taste)

9 1/2 springform pan (or a 9-inch cake pan or even an 8-inch square pan)

Preheat the oven to 450°F.  (The original recipe called for 400° F, I mistakenly did it at 450° which requires less time . . . .so I think I will stick to 450° F and bake it for less time.)

Place the cauliflower florets in a saucepan and add 1 teaspoon salt. Cover with water and cook until the florets are quite soft. They should break when pressed with a fork.  (But don’t break them up.) Drain and set aside while preparing the rest of the ingredients (whatever you didn’t get done while the cauliflower was cooking).

Peel the onion, then cut 3 slices, almost 1/4-inch/5-mm thick, off one end.  Set the onion rings aside.

Heat up the 3 tablespoons of oil in a small pan.

Coarsely chop the remaining onion and cook it in the oil with the rosemary, stirring as necessary.  Cook it until the onion is soft.  When done remove from heat and set aside.

Dance Exercise, Nia, Nia in the City of San Jose, Nia classes in the South Bay, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia, Gentle Yoga, Group Ex classes, YMCA, Zumba, PiYo, Nia Technique, SJ City Fit, SJCityFitWhile the onion is cooking you can line the bottom and sides of the springform pan or your chosen baking dish with parchment paper.  Then use the melted butter to butter the paper in the pan, the sides and the bottom.  In the 9 1/2 inch springform the mixture does not go all the way up to the top so you only need to butter about halfway up.  Mix the white sesame seeds and the nigella seeds together.  Then sprinkle the seed mixture on the sides of the pan.  **USE ALL THE SEEDS!  Perhaps even putting them on the bottom of the pan.**

While your onions are cooling, break the 7 eggs into a large bowl and whisk well.  Add the basil and whisk.  Add the cooked onion and rosemary mixture to the eggs.  Whisking and stirring.  Then stir in the flour, baking powder, turmeric, 1 1/2 teaspoon salt, and pepper.  Stir until all ingredients are mixed well.  Then mix in the Parmesan.  Then add the cooked cauliflower.  Don’t stir too much that you break up all the flowerets into little pieces, but mix it enough so that it is all mixed together.

Pour the egg and cauliflower mixture into the pan.  Spreading it evenly, then put the onion rings on top.  **Sprinkle some seeds on top**  Place in the center of the oven and bake for 30 to 40 minutes.  Bake it until golden brown.  Check complete doneness by inserting a knife into the center.  It is done when the knife comes out clean.  Remove from the oven and serve to your liking, hot, warm, or cold.

I ate on this for a few days.  I can’t wait to make it again with my extra **tweaks.  I really like it.  I thought it was super yummy.  You can use it as the main dish or a side and serve it with a salad and something meaty.  It could be breakfast, lunch, or dinner.  It is yummy!

Five Regrets To Avoid

I believe one of my Nia friends on FB posted a reposting of Bonnie Ware’s Top 5 Regrets of Dying*.  You might have seen it.  You’ve probably heard many people repeat the saying and maybe some people even admit that they don’t regret things they have done as much as things they did not do.  This saying kind of sums up what Bonnie said most people’s regrets were.  Or at least the majority of regrets had to do with things they did not do.

1. I wish I’d had the courage to live a life true to myself, not the life others expected of me.

Wow, huh?  She said this was the most common regret.  I think living a life true to oneself is very difficult for some people.  First of all one has to decide who they are.  With so much information out there and so many ways to be it is not easy for some to decide who they are, so it is even more difficult to be true to oneself.  Then add on the fact that there are people in your life who expect things from  you.  Not an easy task, but according to Bonnie one of the ones that people regret most not doing.  So while you have a chance, I would suggest you work on it.  I work on it daily.

2. I wish I didn’t work so hard.

Again not an easy task.  Especially if you have kids, bills, and/or a mortgage.  Sad that having kids is the very thing that makes you work more because you want to provide THINGS for them.  They are inundated with WANTING and MUST HAVE, so you, as a good parent want to give them things.  With all the extra hours maybe you end up working through a lot of special times.

Most of us could probably learn to live without a few things, exercise restraint when it comes to certain things.  The article states to simplify which could lead to less need, which could lead to more space and happiness.

Yes, I know easier said than done.  But if we listen to lessons from people who have been there sometimes we can save ourselves a lot of heartache.

Remember Bonnie has shared this information from people who are dying.  And these are common regrets.

3. I wish I’d had the courage to express my feelings.

I think learning how to express one’s feelings correctly helps supply courage.  Feelings are emotions that cannot always be helped.  But our actions based on feelings CAN be controlled.  If we are hurt or angry; screaming, yelling, hitting, throwing things, etc. are not good ways to express your feelings.  These things might be therapeutic ways to vent, but they are not good ways to express feelings.  Learning better ways is a step in having the courage.  Also, being in tune with who you are expressing your feelings too helps.  If you have feelings which are strong you want to share with someone and you are having to work very hard to NOT scream and yell it is usually a good idea to do it at a time when the person is receptive.  Try not to have a serious talk where you are emotional when the other person has had a bad day, is tired, or is in the middle of something.  These circumstance make it difficult for the person you are trying to share with to listen openly and give you what you need.  If they had a bad day and you coming to them telling them they hurt your feelings, might make them feel guilty with an instant reaction of yelling and blaming you.  Putting yourself in that type of situation would do the opposite of helping you have courage.  While Bonnie reminds us we can’t control the reactions of others, we can control WHEN we share with them in order to receive a better response.

4. I wish I had stayed in touch with my friends.

Wow.  None of these are easy, huh?  I mean, I have many friends I don’t see as often as I’d like.  Life is busy.  And maybe #2 and #3 actually had an effect on #4?  Could be.  But maybe if we work less and have less stuff to deal with we would have more time for friends.  I know that I could be a little bit more timely with some things instead of waiting for the last minute.  Then I might be free to meet with a friend when she called instead of having to buckle down and get stuff done.

But with all of the social networking available to us, keeping in touch with people might be a little easier than in the past.  We will have to see.  Because it also leads to us having more friends to keep in touch with.

5. I wish that I had let myself be happier.

Hmmm.  Interesting.  Seems like people on their death bed actually admitted to keeping themselves from being happy.    According to Bonnie, they didn’t realize until they were dying that it is a choice.  One chooses to be happy.  Again, maybe this ones ties in with the ones above.  If you figure out who you are and are true to yourself you’ve probably realized you made a choice to be happy.  If you work less and fill you life and your heart up with more wonderful moments you have made a choice.  If you learn the dance of self expression, you will have allowed yourself to be happy.  If you keep in touch with friends and they are the good ones that fill your life and heart, then you’ve made a choice to be happy.

Wow.  Seems like all the regrets on the list are related.  Seems to be that working on these now could help keep us from having regrets when it is too late.  Doing these things when you have the health to do them is important.  As I mentioned maybe #1 thru #4 can help with #5.  Or maybe it is the other way around.  What do you think?

Let Love Be Your Ears

Dance Exercise, Nia teacher, Nia student, Student of Life, Nia classes, San Jose NiaA Nia student of mine reminded me of something after a Nia Class the other day. She said her daily meditation said to speak with love AND to listen with love. I have heard that before I believe, either someone posted it on Facebook or a friend posted about it on her blog. I can’t remember. The speaking with love is not always easy, but I think of it as a more common thought, a more common instruction. It can be compared to the old adage  “If you don’t have anything nice to say, don’t say anything at all.” A well-remembered saying. Somewhat similar. Speaking with love would be saying nice things.  But the listening with love or the hearing with love, that is a little less common of an instruction. I have not heard that one for as long as I can remember as I have heard the other one. I also think it is more difficult to do than to speak with love. I mean, like the old saying says, don’t say anything if you can’t be nice. But it is difficult not to hear someone. If someone is talking you general listen and hear them, but it could be a challenge to do it with love.

We all take our experiences into situations. Our thoughts and actions are based upon our past and what we know. So I believe that we hear and listen the same way. If someone has been in relationships where their partner has lied to them, then they might hear a lie in everything. They might be listening with distrust and anger, not love. If someone is having a bad day and someone says, “Have a nice day.” they might hear it as sarcasm. Whatever it is that we are feeling, thinking, and experiencing at the moment it can definitely “cloud” how we hear things. If we are not conscious of how we are listening we can make something out of nothing. If we hear and listen in anger, we could respond accordingly and cause a fight or hurt feelings. It is not easy to always listen with love. We all have “stuff” going on in our lives. Some of this “stuff” can make us sensitive and this sensitivity can possible make us read into things.  Listen with love is a practice.

I can’t remember if what I am talking about was the focus of my friend’s blog post, but I do remember my comment including the association between what she was saying and the four agreements.  Listening/hearing with love reminds me of “not taking things personal”. “Things” as I mentioned.  If there is something going on in my life that is making me upset, I might listen and hear things in a negative way. Or if someone else is having a bad day and I am not listening with love, I might not stop to think, “Hey, maybe this person is having a bad day and instead of snapping meanly back at them, I should remember that we all have bad days.”

Clearly there are different ways we can take “listen with love”. When I hear that, these are two ways that occur to me.  What do you think of when you hear, “listen with love”?

Lemon Tomato

Beautiful and sweet. I could have sworn the tag said lemon tomato. I don’t think we saved the tag. As you may know I just started eating tomatoes within the past couple of years. My mother-in-law grew Zebra Tomatoes and I started my tomato journey with them.

I have come to realize that I do not care for mushy tomatoes. I like them firm, maybe even on the just-before-ripe side. Also, I like them raw not cooked. So I was watching the tomatoes my Wonder-Hubby planted very carefully. Now, you also may know that I don’t know the first thing about gardening and ripe or not so I rely on my hubby to tell me. He is a fantastic gardener when he has time. He can make on-the-brink-of-death plants come back to life. I was watching the one tomato that was yellow very closely. But obviously not close enough. One afternoon while I was doing Nia in my living room I glanced outside and I noticed the tomato looked odd. I went to investigate, something had tasted our tomato. I was very sad.

I was wondering if taking it and cutting off the “tasted” portion was too gross. I hadn’t examined it to see how much damage had been done. I posted my sadness (either on FaceBook or Twitter) and other people said that they would eat it as long as you were able to cut off all the evidence of “tasting”. Once I assessed the damage and I concluded that whatever tasted it just peeled and poked a little so I cut the fruit in half making sure there was nothing on the half I was planning on eating. Then I cut it up and shared it with my hubby. It was sweet. I was surprised.

I looked online to see if I could find some information about them to post, but there are a lot more than I realized and now I am not sure which ones we have. They kind of look like Lemon Boy but I am not sure because they are much smaller. What do they look like to you? Do you know tomatoes? Whatever they are, they are very tasty. They are somewhat sweet and really taste more like fruit to me.

We wanted to grow Zebras but couldn’t find them. Which is somewhat good because now we have tried a new (to us) tomato. So many people grow tomatoes. Do you? What kind?
