Dinner Desperation

Dance Exercise, Nia, Nia at the City of San Jose, Nia classes in the South Bay, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia, ZumbaFor those of you that cook dinner every night you might understand what I am about to say, “Cooking dinner is difficult.”  Ok, more accurately coming up with ideas of what to cook for dinner is difficult.  I actually have it very easy because my husband would be fine eating the same thing all week then switching to something else the next week.  As long as it was not a vegetarian dish three days in a row.  But I am not happy with that.  As you know if you have read any of my posts about food, I love left overs because they keep me from having to cook or at least keep me from having to start from scratch.  The other night I was really at a loss as to what to prepare for dinner.  It was a Wednesday so I really should have been thinking in terms of cooking for Wednesday so that I could have enough left over for Thursday when I have a late Nia class.  But I couldn’t think “two nights” I just wanted to get through the one night and use the portion of a piece of chicken I had from the night before.  I came up with something that I didn’t even think about being enough for leftovers but it was.  It carried us through two nights.  Asparagus, beans, rice, and chicken.

Another thing you might know about me if you have a read a few of my posts, I LOVE asparagus.  I mean, love, love, love, love.  Once I was asked what food I would want to have given to me free every day and I said asparagus.  But even though I love it, I won’t buy it when it is $8.99 a pound.  I don’t even like to buy it when it is $4.99 a pound.  I might buy it when it is $2.99 a pound, but I like the $1.99 range.  But knowing how much I love it my hubby bought me some recently.  I didn’t ask how much it was.  I just had five pounds of asparagus to eat.  🙂

I often use three servings of meat to make four servings of dinner.  Usually my husband has a serving and I have a good portion of one.  The next night I will use the third serving along with my smaller portion to make another meal.  Well on this night I was using just my left over portion because we had only cooked two servings the night before.  So to me it would be a vegetarian-ish dish.  As it would have way more veggies than meat.

Asparagus, beans, rice, and chicken

—1 tablespoon olive oil
—1/2 of an onion, chopped
—asparagus (2.25 pounds) chopped
—2 teaspoons minced garlic
—1 3/4 cup cooked rice
—2 tablespoons of butter
—3/4 teaspoon ground cumin
—1 15 1/2-ounce can garbanzo beans/chickpeas, drained and rinsed
—3/4th of a LARGE chicken breast, cooked and chopped
—Freshly ground black pepper, to taste
—Garlic Salt, to taste

Heat the olive oil and the chopped onion.  Add the asparagus.  Cook only slightly (because the rice takes a while to heat up).  Sprinkle garlic over asparagus.  Stirring it and allowing it to cook.  Add the rice breaking it up and letting it get soft.  Use the butter to help the rice get moist (might need to use a bit of liquid too).  And the cumin.  When the rice is soft, add the can of garbanzo beans.  Then add the chopped up chicken.  Add pepper and garlic salt to taste.

Since asparagus doesn’t take that long to cook and everything else is ok to eat as is, it is really the rice that needs the most amount of time.  If you are using freshly cooked rice then this would take minutes.  As a note the chicken I used had been seasoned when cooked the night before so that is something to keep in mind when flavoring your dish.

For me it is the beans and the cumin that is “new”.  I have done dishes like this before using other meat.  I think this would also be good with left over pork.

I was thinking of the Red Beans and Rice recipe when I did this, using the beans and the cumin.

Veggie Burrito

Some people Tweet what they had for lunch I blog about it! I think I was actually born to the wrong family because I love tortillas. As far as I am concerned you can put ANYTHING in a tortilla and you have a meal. The issue is that most tortillas are made with lard or loads of fat. The ones I used to get are low fat, but made with . . . . . guess? Yup, you got it partially hydrogenated oil. Even though the label says “Og TRANS FAT per serving” it stills has transfat (that’s the partially hydrogenated oil).

I found one without it. Doesn’t taste the same, but it is not bad. The other day I was craving veggies. Lucky me we had a lot in the fridge.

Here is what my lunch looked like

It was a low fat tortilla (98% fat free) with 8 grams of fiber (whoa!), then I filled it with broccoli, asparagus, and mixed greens. I had some cheese in there too! It was so yummy. I need to write about it when I am eating it from now on otherwise I end up wanting it again as I type!

I hear it is asparagus season (at the time of this post), which for us in San Jose, just means it get down to a reasonable price. Because otherwise we have it here all year round. Might not be at its peak, but . . . I like having it all the time. If you don’t know, I love asparagus.

Usually I roast it, but I had chopped it and sauteed it the night before and it workout that we had leftovers, so for this burrito that is what I had used.

So, tell me what do you put in your tortillas? How do you prepare them? Grilled? Micro-waved? Right out of the package? Does anyone make their own? I would love to learn how to do that!!!

Asparagus Not Roasted

Yup, AGAIN with the asparagus, but this time it is NOT roasted.  You see, my hubby gets just as tired of me cooking roasted asparagus just as you probably get tired of me blogging about it.  Well, we recently went to Coscto (is that a Bay Area thing?  There are a few just in San Jose.) and bought a few bags of asparagus.  I could eat just roast it and eat it that way, but I like to make food that my hubby will enjoy too, so I decided to try cooking it another way.

Trying to come up with something new is a little exercise in creativity. It is funny how it works out when I am just throwing stuff together and when I am just trying something out to be different it turns out that my husband LOVES it.  I never know how it is going to work out.

I put some garlic infused olive oil in a pan with some onions then cooked the ground turkey.  I decided to be totally daring and so I used some balsamic vinegar (hubby is not a fan, but Ithought I would try it).  Then I added the asparagus and I also used some smoky garlic sea salt a friend of ours brought us from Hawaii.

I cooked it all up and served it over rice.  Now, I have to honest, I really liked it, but my hubby LOVED it and it COULD be because I plated his rice, then I took two slices of Havarti and put it over the rice, THEN I put the turkey asparagus combination over that.  So the cheese melted in between thehot rice and the hot turkey.  I had a taste, his tasted pretty much like cheese.  And anything is better with Havarti because it is like butter.  I didn’t have the cheese and I felt it was great and not overpowered by cheese.

I used a package of turkey (I guess it is a pound or a little over) and probably a one and a half pounds of asparagus.

So . . . how else can I cook asparagus?

Again With the Asparagus

Dance Exercies, Nia, Nia Campbell, Campbell Nia, Nia classes in Campbell, evening Nia, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia,Ok, you might know that I love asparagus.  And I love it roasted.  Well, even though we live in San Jose and seems like we can get great fruits and veggies all year round sometimes we buy asparagus and it is huge.  Usually when it is that big in order to get to the good stuff you basically have to cut off a lot of it.  Otherwise you are left with really woodsy-impossible-to-chew asparagus.  Well, I don’t wanna give up that much of my yummy veggie, so I peel it.  I cut off a little bit—like I normally would and then I peel the bottom portion.  This does a few things: 

1) it enables me to eat more of the vegetable,

2) it gets rid of the hard to chew part,

3) it reveals the soft insides of the stalk

Yay! I don’t have to get rid of half my asparagus.

Yes, I know that I am getting rid of the green, but I leave the top portion.  You can try it yourself and see what works for you.  Of course, you don’t have to be having roasted asparagus for this to work out, you can do it with whatever method you best enjoy your asparagus.

Asparagus, Roasted

I love to eat roasted asparagus.  I like it when it is really cooked, not burned, but crispy.  It is probably past the point of supreme nutrition, but that is my favorite way to eat it.  I do like it at its most nutritious, too, boiled until it is tender not soggy.  I haven’t always liked asparagus.  I believe the way vegetables are cooked now is different than from when I was growing up.  Plus, I believe that it is much easier to obtain a fresh vegetable now than when I was growing up.

Apparently the season is from March through August, but we eat it all year round.  To me it tastes better during the “Asparagus season”.

One of the reasons I love to eat it roasted is because it is so easy to cook.  I rinse it off, then chop off the ends—I don’t do that bend and break thing because holding the entire bunch in one hand and chopping with the other is much faster to me — then I line them up in a pan (I have a jelly roll pan).  I sprinkle olive oil on them.  I usually use garlic infused olive oil, but sometimes I go for the lemon olive oil.  Then I salt them and use whatever spices I feel like, then in they go.  I usually cook them at 400 degrees.  I let them bake for 15 minutes, then I flip them.  And let them go 15 minutes more, but you can take them out at anytime and they are delicious.  Sometimes I cook ‘em less, sometimes I cook ‘em more.  Depends on my mood and when the rest of the meal is ready.

Seems to me like they are way worth the time and effort it takes to cook them.
