My Greens Gone Blue — Finally!

In addition to more vegetables I also wanted to consume veggies and fruits that I normally wouldn’t eat but that I have come to believe would be a health benefit to me. One food I have come to believe is a healthy benefit to a diet is blueberries. I don’t like blueberries. If you know me and my love for the color blue you might be a bit surprised that I don’t love one of the only blue foods there is. But I don’t. The flavor is not that great to me, but it is really the texture I don’t like. They are mushy and mealy. Not a texture I enjoy. But they are considered a “super food” so something I wouldn’t mind adding to my diet.  But since I won’t just eat them raw and I don’t like baked fruit in desserts, I was hoping to use my Blendtec to get some blueberry goodness into my diet.

According to the website, World’s Healthiest Foods:

“In terms of U.S. fruit consumption, blueberries rank only second to strawberries in popularity of berries. Blueberries are not only popular, but also repeatedly ranked in the U.S. diet as having one of the highest antioxidant capacities among all fruits, vegetables, spices and seasonings. Antioxidants are essential to optimizing health by helping to combat the free radicals that can damage cellular structures as well as DNA. We recommend enjoying raw blueberries — rather than relying upon blueberries incorporated into baked desserts — because, like other fruits, raw blueberries provide you with the best flavor and the greatest nutritional benefits.”

I think most fruits that are added to baked goods lose a lot of their nutritional value, if not from the cooking themselves, but it might be considered to be “canceled out” due to the added sugar and fat.  But, as I mentioned I am not a fan of cooked fruit in desserts.

With all of the nutritional benefits in mind I finally bought some blueberries with the sole intent of putting them in a smoothie. I thought I had better go with a mild, yummy green so I would be stacking the deck to help the blueberries. I used spinach.

Blueberry Green Smoothie

1 cup water
1/2 container of blueberries
2 handfuls of baby spinach
1 (1/2) frozen banana
10 ice moons
1 scoop protein powder

It was very good. My husband is pretty amazing when it comes to tasting the ingredients. He tasted the blueberries right off. I knew they were in there and I didn’t seem to taste them.  He pointed out that you can see them.  Little tiny flecks of blueberries were in the smoothie.  And yes, I know the were in there, I made it.  Silly man!

So now that I have tried blueberries in a smoothie and liked them I can try using other greens.  Now that I know they don’t ruin it.  Tee hee.

Veggie-Less

The other day we were out of vegetables.  OH MY!  On my way home from Nia in Willow Glen I was going to go to the store to get some.  For some reason there’s a street in Willow Glen that has been closed for quite some time now so I was unable to take that street home.   So the detour had me going past a different store than I was planning on going to.  It is a produce store.  Maybe kind of more like a small market because they have dry goods also.  The produce there is not that great so I decided not to get lettuce and salad fixings.  I thought I could just grab a veggie for that night’s dinner since I was going to be going to the store the very next day after my Nia class at the community center.    All I bought was broccoli.  When I got home I decided to have a sandwich. I like lettuce on my sandwiches or cucumbers or bell peppers something like that. I usually put at least one of those vegetables, sometimes all three, or a combination on my sandwich.  But I didn’t have any because I didn’t buy any salad ingredients.  Argh!  I had only the broccoli I had bought.  I started thinking.  I’ve had shaved broccoli on pizza before and it was good but I didn’t think the shaved broccoli would go that well on my sandwich.  I remember having posted something about broccoli before and people saying that you could use the stocks or stems so I thought,  “Can I do that?”  So I peeled a stock of broccoli and sliced it thinly and put on the sandwich was pretty good. I was happy I had a vegetable on my sandwich.

I have left more of the stem on when using broccoli but haven’t necessarily used the stocks.  I suppose I could begin making my sandwiches with broccoli stocks in them.  It is a good way to get additional vegetables and use broccoli stocks.

We used to have a dog that ate broccoli stocks.  She loved them.  She loved salad too!

Speaking of salads . . . . I didn’t use all the stocks in my sandwich.  So the next night when I did get around to making a salad I decided to add some of the stocks to our salads.  To me the stocks are a bit fibrous and stringy so I chopped them up pretty small.  I tossed it on the salads as an added veggie.  I think that worked out well.  My hubby didn’t say, “Ewww.  What is this?  A broccoli stock on my salad???”  So it must have been ok.  I liked it.

At first I was not happy that I didn’t buy any produce that I would normally put on my sandwich.  But now I am glad that I didn’t.  I caused me to think of using the stems.  And since my friend had shared that she eats the stems it encouraged me to try something new.  Lovely.  It has only taken me three years from when I originally posted!  🙂

Special Cooking On Special Occasions

My husband claims he can only cook three meals.  The three things do not include him cooking meat and veggies on the grill.  The meals that he will cook are beef stroganoff, taco salad, and curry.  On special occasions I will request that he make dinner.  When I first met him I told him that I would not cook dinner every night.  And if I were still working a 40+ hour a week job OUTSIDE of the home, I probably would not.  But as my current 40+ hour a week job has me at home more often than not, I have been cooking almost every night.  But you know how I love leftovers so I do take advantage of that when I can.  For Valentine’s Day, Birthdays, and wedding anniversaries I usually request that he cook.  Most often I prefer that rather than going out.  The past couple of times that he has cooked I have asked for curry.  To me I only know curry the way he cooks it and serves it.  He buys beef and cooks it with curry seasonings.  He makes rice and we put the meat over that.  The best part is all the toppings.  And one of the reasons I like when HE makes it is I don’t have to chop up all the toppings.

For our curries we use raisins, peanuts, sunflower seeds, carrots, bell peppers, brocoli, mango chutney, cucumbers, onions, and coconut.  I don’t put peanuts or coconut on mine, but he puts it on his.  On the plate pictured I didn’t put onions, but on the next night’s plate I did. The meat was cooked with onions so you still might see some in the photo, but not the raw ones.

Dance Exercise, Nia, Nia at the City of San Jose, Nia classes in the South Bay, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia, ZumbaThe rice and the meat are hot (temperature) while the vegetables are raw.  I love to add a ton of vegetables to my plate.  It is so interesting because every bite is different.  You never get the same thing.  I like the veggies chopped up really small so that I can get a bite with rice, meat, and a bunch of veggies in my mouth.  If the veggies are too big then you just end up with rice, meat, and ONE veggie and that makes it seem like a regular meal, not a curry dish.

I don’t know how other curry is served but that is how my husband does it.  Also, the poor guy . . . he LOVES hot stuff, especially curry, but — if you have read a couple of my posts about food, you know I cannot tolerate spicy heat at all.  So my hubby makes our curry meat totally mild.  There is NO HEAT AT ALL.  But the flavor is really good.  I feel bad that he does not get to experience the spicy heat.  Maybe we can make up a separate dish of HOT curry sauce and he can put that on his curries.

Another thing I love about curry is that there is usually enough for at least one more meal.  If you’ve read a couple of my posts about food, you know I love to have leftovers so I can alleviate at least one night of cooking a full meal.

I really like curry.  Maybe I should request it more often.  Not just on special occasions.  Then on a special occasion I can request of his other specialty meals.  🙂

Farm Fresh To Me – Delivered Goodness

A couple of weeks ago I decided to have home delivery of produce.  I had to wait until I was home to get it.  Remember that “stuff” I had posted about before?  The stuff had me traveling out of town that is why I had to move my Nia classes for two weeks.  I scheduled delivery for when I would be home AND I knew that I would have an empty/veggie-less fridge. I have often thought of having home deliver, but I just couldn’t justify it.  I finally decided to do it with the following as justification:

1)  I would have fresh organic produce.

In the grocery store I don’t always by the organic stuff because it is not what I want.  I think I might be 40%/60%.  With the organic fruit and veggies being delivered to me it will probably switch those numbers to 60%/40%.  This will be better for us.

2)  It would be delivered to my door.

I figured with gas prices as expensive as they are having something delivered to my door is very economical.  If they are bringing produce to me, it is keeping me out of the store at least one time a week.  Plus, when I am at the store I sometimes end up spending money on things we might not need to be eating.  I run in to get veggies then I think, “Hmmm?  What else do we ‘need’?”  And most often we don’t “need” anything but the produce I went into buy.

3)  I would get “stuck” with new things.

I am in the habit of buying the same vegetables over and over.  I do the same thing with fruit.  We have a farmers market fairly close to us, but they don’t have a lot of fruit.  The one that is really nice is a bit further and we don’t always get to it.  I have seen questions posted on FB about how to cook what was received in this week’s “box” so I thought that if I ordered produce I would end up with things new to me.   I was thinking that I would get a better variety of veggies if I just took what they were selling.  AND I would learn new stuff along the way.  What do I do with some of the things they send?  I am looking forward to finding out.

Dance Exercies, Nia, Nia Campbell, Campbell Nia, Nia classes in Campbell, evening Nia, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, NiaI did a search on the internet and “Farm Fresh To You” came up.  It is always kind of a risk doing stuff like this because you just don’t know.  But I was really happy when I saw a picture on the website that said, “Capay” because they are a farm that sells at one of the farmers markets I go to.  AND they are one of the vendors I frequent because they are all organic.  I like their produce.  So I was happy that I was familiar with the main farm that delivers.

It is cool they way they do it too.  I was talking to a friend who said that she just decided to do something similar, but with the farm she is working with you have to pick up your box and you subscribe for the whole summer.  I think her subscription is more of what you might be familiar with called a Community Supported Agriculture (CSA).  With the service I went through I just pay per box.  I can start and stop anytime.  There are different types and sizes too.  They have all veggies, all fruit, all “no-cook”, mostly veggies, etc.  It is pretty amazing – to me – what they offer.  They deliver in areas on certain days and the day they deliver in our area works out PERFECT for me.

I know a lot of people who subscribe to a CSA.  Do you?  Don’t you think having produce delivered to you is helpful?

Salad

Typically when I think of salad I think of a GREEN salad, a salad with lettuce.  Salad, however can be made up of a variety of things.  I am in the habit of saying “salad” for green salad and vegetables then saying “pasta salad”, “fruit salad”, “potato salad”, etc. for other salads.  We have a salad every night when we eat at home.  If we dinner at home 25 nights out of the month 20 of them will be with salad.

But sometimes I don’t have lettuce.  So I do on occasion just make a veggie salad.  Basically the same things I would put in a green salad but without the green of the lettuce.  Here in this picture, there are cucumbers, red and green bell peppers, onions, and it looks like a little feta cheese.  Maybe it could be considered a Greek Salad.  I didn’t think to put olives in it.  But it was good anyway.

Fiber Intake

Do you know how much fiber is ideal?  Do you know how much fiber the average American eats?

First of all let me tell you a little “un-detailed” story.  I visited a friend on the outskirts of San Jose one day and she had a snack sitting on her counter.  She asked me to try it and she said if I liked it I could have it because she didn’t really like them and they “didn’t agree” with her partner.  Well, I liked them, and so she let me have them.  When I got home, I had to laugh.   I was looking at the Nutrition information on the package and one serving works out to be almost  as much fiber as the average American gets per day. So it dawned on me that maybe it “didn’t agree” with her partner because of that.

Ideally we should be eating about 35 to 50 grams of fiber a day.  The average American eats less than 1/3 of that—yes, about 10 grams a day.

Now, as a refresher, fiber is the plant material that is not digested by humans.  Our digestive enzymes just can’t cut it.  It can be found in whole grain, fruit, vegetables, nuts, and beans.

So, I’ll leave you with this suggestion, try to add a little bit more fiber in your daily intake.  Do not add a lot of fiber all at once.  But do try a little bit a day.  What could you add to your diet today that would add fiber to it?

Again With the Asparagus

Dance Exercies, Nia, Nia Campbell, Campbell Nia, Nia classes in Campbell, evening Nia, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia,Ok, you might know that I love asparagus.  And I love it roasted.  Well, even though we live in San Jose and seems like we can get great fruits and veggies all year round sometimes we buy asparagus and it is huge.  Usually when it is that big in order to get to the good stuff you basically have to cut off a lot of it.  Otherwise you are left with really woodsy-impossible-to-chew asparagus.  Well, I don’t wanna give up that much of my yummy veggie, so I peel it.  I cut off a little bit—like I normally would and then I peel the bottom portion.  This does a few things: 

1) it enables me to eat more of the vegetable,

2) it gets rid of the hard to chew part,

3) it reveals the soft insides of the stalk

Yay! I don’t have to get rid of half my asparagus.

Yes, I know that I am getting rid of the green, but I leave the top portion.  You can try it yourself and see what works for you.  Of course, you don’t have to be having roasted asparagus for this to work out, you can do it with whatever method you best enjoy your asparagus.

Refrigerator Cleaning

I was in my refrigerator the other day and I noticed that both of the vegetable drawers were empty. That in itself is NOT a good thing, but what it lead to, is a GREAT thing. It reminded me that I had had a conversation with my mom about this so I thought, “Heck, maybe it would be an ok blog.” My mother actually couldn’t believe that I don’t clean my refrigerator.

Well, to be exact, I don’t empty the entire thing out and wipe it down as often as you might think. What I do, is wipe empty drawers and shelves. I HATE emptying out the entire thing so when there is an empty spot I wipe it. If there is a shelf with hardly anything on it, I put those things on another shelf and wipe the now empty shelf.

Veggies are always leaving remnants of themselves in the drawers so I tend to wipe (and dump) those out more often.

There are a lot of great things about the wiping-an-empty-spot method. For one, you don’t have to take everything out and deal with it—-I so hate that. Another thing is, if you are trying to put the few items from one shelf on another so you can wipe an almost empty shelf sometimes that “forces” you to throw away an outdated something rather. I have a tendency to keep things because I hate being wasteful, but when I have an almost empty shelf and I just need space to move one or two things but there is an outdated item in my way—-great time to toss it.

And a BIG HUGE benefit is guests. They come in your house and go into the fridge and they say, “Wow, your fridge is so clean.”  When in fact it might not be sooooo clean, they are just focusing on the empty spot—-because that is usually what they are in there in the first place, they want to put something in there. And they see the empty spot which you just wiped so they think the whole thing is clean. AND in reality, it IS cleaner than it would be if you actually only wiped it out when you took the time to empty the entire thing.

Asparagus, Roasted

I love to eat roasted asparagus.  I like it when it is really cooked, not burned, but crispy.  It is probably past the point of supreme nutrition, but that is my favorite way to eat it.  I do like it at its most nutritious, too, boiled until it is tender not soggy.  I haven’t always liked asparagus.  I believe the way vegetables are cooked now is different than from when I was growing up.  Plus, I believe that it is much easier to obtain a fresh vegetable now than when I was growing up.

Apparently the season is from March through August, but we eat it all year round.  To me it tastes better during the “Asparagus season”.

One of the reasons I love to eat it roasted is because it is so easy to cook.  I rinse it off, then chop off the ends—I don’t do that bend and break thing because holding the entire bunch in one hand and chopping with the other is much faster to me — then I line them up in a pan (I have a jelly roll pan).  I sprinkle olive oil on them.  I usually use garlic infused olive oil, but sometimes I go for the lemon olive oil.  Then I salt them and use whatever spices I feel like, then in they go.  I usually cook them at 400 degrees.  I let them bake for 15 minutes, then I flip them.  And let them go 15 minutes more, but you can take them out at anytime and they are delicious.  Sometimes I cook ‘em less, sometimes I cook ‘em more.  Depends on my mood and when the rest of the meal is ready.

In addition Asparagus contains Thiamine (Vit. B1), Riboflavin (Vit. B2), Niacin (Vit. B3), Pantothenic Acid (Vit. B5), Vitamin B6, Folate (Vit. B9), Vitamin C, Calcium, Iron, Magnesium, Phosphorus, Potassium, Zinc, and Manganese.

Seems to me like they are way worth the time and effort it takes to cook them.
