Ricotta Cranberry Turkey Rolls

I took out some turkey for dinner recently. I had thought it was ground turkey, you may know how I cook ground turkey all the time sometimes adding a vegetable sometimes not. I can serve it with anything; rice, pasta, potatoes, bread or in a tortilla. It is very easy to cook and very versatile. Well, it wasn’t ground turkey it was turkey breast fillets. They were somewhat of a mistaken purchase. I didn’t know what to do with them but then I remembered I have a bag of cranberries. People eat cranberries with turkey so I thought I could put them in the turkey.


Ricotta Cranberry Turkey Rolls

Turkey breast fillets (5)
Ricotta cheese (about 3/4 cup)
Dried cranberries (1 cup to 1 1/4 cup)
Balsamic vinegar

Preheat oven to 450°F.

Lay the turkey breasts out sprinkle them with salt and a little pepper. Put about a tablespoon of ricotta on one end and then sprinkle with cranberries. Roll up each breast and place in a baking dish. Sprinkle with sherry and balsamic vinegar. Add another sprinkle of salt. Place in the oven. After about 15 minutes take the dish out and put some mozzarella on top of each roll. Then put back in the oven for about 15 minutes. 

Make sure the meat is fully cooked before serving.

You can serve with some cranberries sprinkled on top. 


This was yummy.  I was super happy that is was good.  But you know me I love that ricotta cheese!

What do you do with dried cranberries?

I forgot to take a picture of it on our plates, but it wouldn’t have looked any better than this.  I do not like to spend time pretty “plating” my food.

Turkey Hash

I cook with ground turkey a lot.  I also cook with onions and garlic – a lot.  I just throw stuff together, but primarily flavor it with onions and garlic.  I am sure that I have stated this before because it is what I do.  Every once in awhile when I branch out . . . I am sure I have posted about it.  And, I am sure I have posted about me wanting to use different flavors.  I DO use different flavors, but onions and garlic is my default.  But the other night I wanted a different flavor.  This recipe does contain onions AND garlic, but they are not the predominant flavor.  As I was cooking this I had a thought and I think it turned out to be true.  My hubby doesn’t like corn-beef hash.  Half way through cooking I thought, “Oh no!  This is sort of “hash flavored” is he not going to like it?”  Well, it was not his favorite.  When he likes something he comments on it.  I was the only one complementing the chef that night.  AND the next night when we had it for leftovers.  So while I LOVED this, my hubby was ok with it.  So unfortunately this might not become a staple . . . although I will cook it every once in a while.


Turkey Hash

olive oil
1/4 of an onion
1 pound red skin potatoes
2 teaspoons basil
1 teaspoons parsley
1 bay leaf
2 teaspoons garlic salt
1 teaspoon coriander
1/2 C water
1 teaspoon powdered mustard
1 pound ground turkey
1 teaspoons salt
sprinkle of garlic salt
1 green bell pepper
black pepper (optional)

Pour some olive oil in a pan.  While the oil is heating chop the onion.  Put the onions in the pan, while they are heating cube the potatoes.  When the onions are translucent . . . or if you like them a little caramelized, add the potatoes.  Stir the potatoes. While they are cooking add the basil, let them cook.  Then add the parsley and bay leaf, let them cook some more.  Sprinkle the garlic salt on the potatoes.  Add the coriander.  Cook the potatoes until they start to brown.  Then add the water and powdered mustard.  Cook until the water evaporates.  Brown the potatoes some more, then add the turkey.  Add the salt . . . sprinkle on the garlic salt.  While all of this is cooking chop the bell pepper.  If you like your bell pepper cooked then add it well before the turkey is cooked.  If you are like me and you like it raw, then add it when the turkey is pretty much cooked.  If you like black pepper, add it.



So, I really liked this, but my hubby not so much.  But he is a good sport and he will eat it when I make it.  Thankfully he eats pretty much whatever I cook.  Whew!

The next night, I added corn to the left overs.  That was interesting . . . potatoes and corn.  Actually the potatoes were pretty much gone.   I liked the different flavor the corn added.  I don’t often cook with corn.

Amongst the Sadness and Sorrow, There is Thanks

Since my posting schedule is Tuesdays, Thursdays, and Saturdays, I am always going to end up posting on Thanksgiving.  My hubby and I don’t have kids and we are both the youngest of the children.  I have always figured that I don’t get to do the Holiday dinners because I don’t have kids and I am the baby.  That is fine with me.  As I have shared with you before, I am not a fan of all the traditional Thanksgiving Day food.  I usually just eat the turkey sans gravy, the bread, the potatoes, and the salad.  If there is another vegetable I will eat that.  But I don’t like the sweet potato casserole, the stuffing/dressing, the cranberries, or the gravy.  So to me the meal is not one of those meals that I look forward to all year long.  But I do like to give thanks.  I am very blessed so I give thanks all year round, but on Thanksgiving people are more apt to accept the compliment and the gratitude.

dance exercise, Nia, Nia class, Nia Dance, Nia cardio dance exerciseThis year there are some sad things surrounding our holidays.  This is the first year we will be without the matriarch of husband’s family.  This is a source of great sadness, of course.  I am sure there will be many tears shed as we gather without the light that brightened every family gathering.  I am sure it will be a bit surreal.  Also my hubby’s best friend will be experiencing his first holiday without his mom.  And another loss that I am feeling – although less drastic – one of my best friend’s is moving away.  She is moving far enough away that there will be no day trip visits.  This will be the first Christmas in 25 years that we will not have “Christmas with the Girls.”  Yes, I know this is a post about Thanksgiving, but she will be gone right after, so I mention it.  So much loss, so much sadness.

But even though moments of sorrow might have me bowing my head for tears to fall, life is still a blessing.  There is so much to be thankful for.  I cannot deny the blessings that I have.  I can’t walk around in a constant state of gloom.  I have to go on being joyful.  I have to go on with the dance.  As we say in Nia, Dance Through Life.  Yeah, right in the middle I might stop stricken by the realization, stopped by a thought or a memory, but it’s not right to dwell on the sadness and the injustice of it all.  Not only will dwelling on the negative effect me, it is an affront to all that is good.

So while this Holiday season will have a large shadow hanging about, I will shine bright enough in my thankfulness that I will not allow the darkness to prevail.  Of the things I will be expressing gratitude for is the blessing of these people having been in my life.  So I like thanksgiving, because it is a time to gather and give thanks.  It is a time for gratitude.

I hope this finds you and yours well.  I hope there are things in your life you can be thankful for.  Even if this is not the time of yerr for your Thanksgiving (Canada does it in October) or if you don’t celebrate it at all, maybe you can give thanks just because your are grateful.

My post last year said I didn’t like Thanksgiving, which is not true and in the sentence following I explain it is all of the traditional foods that I don’t go ga-ga over.  I do love the thought of giving thanks and spending time with family.  I was thinking about family traditions and some of the food traditions familes have.  I have a friend whose family has a tradition of creamed onions.  I have never even heard of creamed onions.  I asked her about it and she said that over the years the recipe has been altered but it is something that they have had for years.

I love stuff like that.  Hearing what families have at family dinners.  I know of families that have jello salads.  I knew a family that had pistashio salad.  Some familes have a tradition of homemade bread.  Some families always have to have green salad, no matter what other vegetable is being served there has to also be a green salad.  Or what about the infamous green bean casserole?  I think a lot of familes do that one.  What about the spinach dip?  Do you know a family that has to have spinach dip before dinner?  Deviled eggs is also a big tradition with some familes.  Oh, and sushi, my husband’s family loves the sushi.

What about the turkey itself?  There are roaster families and barbeque familes.  And then of course, the fryer families.  I worked with a guy who said that his family fries the turkey and they also tell all the neighbors to come over so they can do theirs too because—he was explaining—that once the oil is hot it is easy just to keep cooking them.  That way all that oil doesn’t go to waste.  I have never had a fried turkey but from what people tell me is that it is cooked so fast the turkey doesn’t even absord that much oil.

Then there is dressing vs. stuffing.  As much as I love bread, I am not really a fan of either.   Oh, and cranberries.  What about mashed potatoes?

Asparagus Not Roasted

Yup, AGAIN with the asparagus, but this time it is NOT roasted.  You see, my hubby gets just as tired of me cooking roasted asparagus just as you probably get tired of me blogging about it.  Well, we recently went to Coscto (is that a Bay Area thing?  There are a few just in San Jose.) and bought a few bags of asparagus.  I could eat just roast it and eat it that way, but I like to make food that my hubby will enjoy too, so I decided to try cooking it another way.

Trying to come up with something new is a little exercise in creativity. It is funny how it works out when I am just throwing stuff together and when I am just trying something out to be different it turns out that my husband LOVES it.  I never know how it is going to work out.

I put some garlic infused olive oil in a pan with some onions then cooked the ground turkey.  I decided to be totally daring and so I used some balsamic vinegar (hubby is not a fan, but Ithought I would try it).  Then I added the asparagus and I also used some smoky garlic sea salt a friend of ours brought us from Hawaii.

I cooked it all up and served it over rice.  Now, I have to honest, I really liked it, but my hubby LOVED it and it COULD be because I plated his rice, then I took two slices of Havarti and put it over the rice, THEN I put the turkey asparagus combination over that.  So the cheese melted in between thehot rice and the hot turkey.  I had a taste, his tasted pretty much like cheese.  And anything is better with Havarti because it is like butter.  I didn’t have the cheese and I felt it was great and not overpowered by cheese.

I used a package of turkey (I guess it is a pound or a little over) and probably a one and a half pounds of asparagus.

So . . . how else can I cook asparagus?

Giving Thanks

I am not a big fan of Thanksgiving. I don’t care for any of the traditional fare; sweet potatoes (especially with marshmallows, what is up with that?), stuffing, dressing, turkey, gravy, cranberries, and pumpkin pie. I don’t get excited for the big dinner. I do, however, like the idea of having a day where we give thanks.

It looks like the United States and Canada are the countries that do the Thanksgiving celebrating. But according to Wiki Grenada and the Netherlands do some celebrating to. The time of celebration was about the harvest, but now, as with a lot of Holidays it has morphed into something else.

I have been blessed with so many things to be thankful for, I make it a point to say thanks everyday. But with a day designated for giving thanks I get to gather with my family near my home in San Jose. Sometimes we get to be with both families, but this year it didn’t work out that way and we are staying local. I am thankful for all my blessings.  Including you.
