Avgolemono – My Way

I am not sure if I have said this before in other posts, but for 38 years of my life I did not really care for Greek Food. I was not a fan of tomatoes and it seemed like there was a lot of tomatoes in the Greek food here. When I went to Greece my mind was changed. There wasn’t tomatoes in everything and I liked the way they cooked their food. Although I still believed I didn’t like Greek Lemon Soup. I am not a fan of the lemon flavor for the most part so I never tried it. When there was opportunities to try it there was always either rice, celery, or carrots in the soup in some combination. I do not like rice in soup and I am not a fan of water-laden carrots. I do not like celery. One day we were at a local restaurant and my husband ordered the Greek Lemon Soup. Even though he “doesn’t share food” he let me have a spoonful – it was delicious. It was simple, just chicken and pasta! Ahhhh . . . . I found some Avgolemono I liked! So I decided to make some. I found a lot of recipes online with celery and carrots and rice in some combination, so I didn’t look past the ingredients.  I wasn’t finding one to use.  I knew I wanted to use pasta.  I had purchased some orzo online with the sole purpose of making Avgolemono, but I hadn’t planned on making it the night I ended up making it. I did not make a special trip to the store for ingredients.  So I made the soup with what I had on hand, which was a limited number of eggs and canned chicken. Just to put it out there, there is NO CELERY, NO CARROTS, and NO RICE in this soup.

1 tablespoon olive oil
1/4 onion
two cans of chicken (a little over 3 cups)
garlic salt

2 tablespoons butter
3/4 cup orzo  (going forward 1 cup)
8 cups chicken broth

7 eggs
4 lemons / 3/4 cups lemon juice (more if you like it really lemony)

Juice the lemons. Set aside. (Zest one if you want some zest for garnish.)

Chop the onion. Heat the olive oil in a pan. Cook the onion then add the chicken to the pan to heat it up a bit*. Sprinkle some garlic salt on chicken while stirring.

In a large pot, melt the butter, then add the orzo to toast it. Add the chicken broth to the orzo. Bring to a boil. Then let simmer.

While the orzo is cooking in the broth mix the eggs together with a hand mixer. Mix the eggs at least 3 minutes on low allowing a lot of air to get into them making them frothy. After the “at least 3 minutes,” add the lemon juice slowly while mixing the eggs.

Once the orzo is cooked (about 15 minutes – test to verify) add the egg mixture to the broth BUT not all at once. Put a little bit of broth into the eggs while mixing. Keep adding broth a little at a time to slowly bring the eggs up to the temperature of the broth. Once the eggs are tempered add the mixture to the broth. Stir the egg mixture and broth together. Once it is all incorporated add in the chicken. Mix it all together. Then taste. Is it lemony enough for you? If not add more lemon juice. Or add some lemon zest as garish to each bowl – this gives it an extra zing!

*if using raw chicken cook it thoroughly

I had typed this up to use as my recipe to make the soup. I figured I would need to play with it a lot in order to get it to what I was looking for, but nope. THIS. IS. IT. Oh, except I will use more orzo . . . perhaps a cup maybe more. But I really think that the orzo is all that I will adjust.

Originally I wrote the recipe with salt and pepper as ingredients, but I did not add any additional salt besides the garlic salt. And my husband added pepper to his bowl, but said it did not really add anything to the soup so he would not be using it, so I didn’t even try.

I am going to check in with my uncle who, I am told, makes Avgolemono all the time. I want to know what he does. Although, my husband and I really loved this and so for the most part I will probably just stick to this.  But sometimes it is nice to try things a little differently so that is ALWAYS an option.

YAY To New Things

Yay!  I am so excited — I am taking the next level of Nia, Blue Belt AND I received fennel in my organic produce box.  Fennel.  Yay.  Two new things.  As you may know if you’ve read any of my posts about the delivery I receive, I ordered it partly because I wanted to try new stuff.  Yeah, it is possible to go to a store or a Farmer’s Market and purchase produce I have not tried before, but I don’t.  I just stick to what I know.  But when I get it delivered to me then I can work with it.  I am excited to be trying new things.  Ok, I just realized though that while I am cooking with a new-to-me vegetable I did it the same way I do everything.  I have heard about roasted fennel and again, if you’ve read anything about my cooking you know I roast pretty much all my veggies.  So I did that again with the fennel.  This time I also looked at the information on the website of the company that delivers the produce.  Yes, I learned after chopping off the beat greens and throwing them away, that I should find out what portion of the fruit/vegetable can be used.  The information indicated that the bulb can be roasted and the fronds can be used to flavor meat.  I am not familiar with fennel.  It is not a vegetable I even think about.  So I was happy to receive some to try.  Yay a new-to-me vegetable.

As soon as I cut the fennel I recognized the smell.  So I must have had the flavor somewhere.  Which makes sense because fennel is actually an herb that is eaten as if it were a vegetable.  I’ve probably had it in a Greek dish or something from the Mediterranean region.  I decided to use some of the fennel with the chicken I was cooking.  I just cut off some of the fronds and put them in the dish with the chicken that I was cooking.  I didn’t change the recipe I was planning for the meat, I just put the fennel tops around the chicken.

The bulb of the fennel I sliced, put in a pan, sprayed with olive oil, drizzled with balsamic vinegar, sprinkled with salt, and put in the oven at 400 degrees F.  I cooked it for about 40 minutes.  It was good, but I thought it was sour.  My hubby didn’t think it was sour.  I am wondering if it was because I took the pieces that were drenched in vinegar.  He doesn’t really like vinegar so I decided to take those pieces.  Or maybe it was just what I was tasting.  But I will get some fennel in the future to see.

I still have some of the fronds left so I plan I using them in other dishes.  Maybe cut up on a salad, added to a soup, or cooked with other meat.

Greek Snack

Tonight we are going to dinner in Willow Glen, which is San Jose, but San Jose is large and spread out so having the sections help us determine the general location.  Downtown Willow Glen is where I have my Nia classes, and is fairly close to downtown San Jose.**  We went with a group of people who Yelp (so they are called Yelpers) on Yelp.com.

We are going to Opa.  It is a Greek Restaurant.  I am part Greek.  I didn’t like Greek food until recently.  Since we are going to a Greek Restaurant it started me thinking about one of my favorite snacks that I have been having lately.  Greek Yogurt.   I didn’t even know that there is such a thing until about two years ago—and I am Greek.

There are probably as many different brands of yogurt as there is (types of) Yoga,  just like there are different brands of regular yogurt, but what you will find is that Greek Yogurt is thicker.  It seems creamier.  And it typically has less sugar and a lot more protein.

I have been eating plain non-fat to which I added a little bit of sugar, vanilla, and some super crunchy cereal.  Yum.  So I guess you could say that I am using it like milk.  But I won’t drink non-fat milk, but I will eat non-fat yogurt and get a lot more protein!  Plus with its smooth, think, creaminess it is like dessert for breakfast!

Also, during our heat wave I decided to make chicken salad sandwiches for dinner.  I didn’t realize we were out of mayo when I decided on that refreshing dinner.  But I used the yogurt instead.  It worked great because it is more like mayo in consistency than regular yogurt.  Don’t tell my husband because it also has less fat and more protein than mayo.  And I did add a little bit of mayo so it would taste like regular mayonnaised chicken salad.

So next time you are in the store you might want to pick up some Greek yogurt and do some experimenting of your own with it.  It can be used a little differently than regular yogurt.  Then let me know what recipe you used it in.  I am always looking for new things to make!

**Good thing I looked up the event before we went, granted it was after I posted this, but we actually ended up going to Opa in Los Gatos!  It is important to check on event locations and not assume . . . . . 🙂
