Broccoli Mess

I have to save up most of my “vertical” for my Nia classes right now. Even though I have injured/broke my toe I am still teaching my classes because Nia really is about the individual moving in his or her own way. But I still need to rest it as much as possible. Even though I am “letting go” of doing a few things this season, I am still trying to make it look “Christmasy” in the house. Since I was moving a lot today I was trying to come up with an easy dinner. Also, since I need to rest my foot my hubby has been cleaning the kitchen every night. So needing a quick easy dinner AND trying to use as few dishes that need hand washing as possible, AND trying not make a mess I was not thrilled with the thought of the mess that preparing broccoli makes.

I am going to admit that I have been making less broccoli than I think we should eat because I do not like to deal with the mess it makes. I usually just cut it in the sink so I can just rinse all the little particles down the drain, but I didn’t even want to stand that long. So I realized that I could just cut it while it was in the bag. YAY!!! No broccoli mess. No little particles all over the place.

Ok, I know this is a silly thing, but I thought it was a good idea. Saved me a lot of time. Since I am short on time that I can be ‘doing’, both this quick post and the quick tip are part of doing what I have to do in order to get to resting my foot in order to be ready for my Nia class in Los Gatos tomorrow.

Anti-Inflammation Foods

I did a post on inflammation, listing a few things that might contribute to chronic inflammation. A state that stresses the delicate balance of the body. It really seems as if overly processed foods and fast foods are the culprits which is just more reasons to avoid foods of that nature. There are some foods that studies have shown that help fight inflammation, foods we can call “anti-inflammation foods” per se.

Omega 3 oil cold water fish (salmon, mackerel, anchovies, herring, sardines)

Grass feed beef

Sweet potatoes

Onions

Olive oil

Hemp Oil

Broccoli

Cauliflower

Brussels sprouts

Kale

Cherries

Blue berries

Mangos

Turmeric

Ginger

Garlic

Cinnamon

Apples

Red grapes

Carrots

Green leafy vegetables; dark green leaf lettuce, spinach, collard greens, turnip greens, mustard greens.

Now please keep in mind this is just a partial list. Everyone is different and with so many different bodies, one needs to take what they read and realize that it will not work for everyone. You have to work on yourself and your own diet. See how you feel when you cut some of the “inflammatory foods” out of your diet and add some of the “anti-inflammatory” foods in.

I teach Nia classes because I believe, in addition to food that helps, movement/exercise/being active helps.  I want to help people.

Again food that might help the immune system balance itself and not react with inflammation, something worth thinking about.

Broccoli – An Amazing Food

Broccoli is one of those vegetables that can be eaten raw or cooked.  When eaten raw people sometimes smother it in dip. While that does not take away from the nutrients of the broccoli itself it somewhat might help in defeating the purpose of eating healthy.  But that is fodder for another post.

A common way to cook broccoli is to steam it or boil it. One way to easily steam it is to stand the crowns up like little trees in a dish of shallow water and microwave it for a few seconds.  It depends on how much you want it cooked.  The less cooked better preserves the nutrients.  Boiling it might cook away some of the amazing nutrients that have been attributed to broccoli.

The amazing part of the nutrients of broccoli is that is has so many.  It is high in vitamin C, K, A, and is high in fiber.  It is believed to have anti cancer properties, such as sulforaphane and indoles which are phytonutrients.  This are nutrients found in plants that are thought to be nutrients that might help keep our bodies in check and in balance and not contribute to cancer.

Broccoli has been found to reduce the risk of prostate cancer.

It might not smell pleasant while cooking it or after, but that is the sulfur that you smell.

1 cup of steamed broccoli has:

—over 100% of the Daily Value of vitamins C and K
—45% of the Daily Value of vitamin A
—20% of the Daily Value of dietary fiber
—15% of the Daily Value of potassium
—10% of the Daily Value of magnesium
—almost 10% of the Daily Value of protein and calcium

Broccoli has more vitamin C than an orange and more calcium than a glass of milk.  It really is a wonder vegetable.  Remember frozen CAN be just as good as “fresh”.

Broccoli has been found to help prevent heart disease.

Veggie Burrito

Some people Tweet what they had for lunch I blog about it! I think I was actually born to the wrong family because I love tortillas. As far as I am concerned you can put ANYTHING in a tortilla and you have a meal. The issue is that most tortillas are made with lard or loads of fat. The ones I used to get are low fat, but made with . . . . . guess? Yup, you got it partially hydrogenated oil. Even though the label says “Og TRANS FAT per serving” it stills has transfat (that’s the partially hydrogenated oil).

I found one without it. Doesn’t taste the same, but it is not bad. The other day I was craving veggies. Lucky me we had a lot in the fridge.

Here is what my lunch looked like

It was a low fat tortilla (98% fat free) with 8 grams of fiber (whoa!), then I filled it with broccoli, asparagus, and mixed greens. I had some cheese in there too! It was so yummy. I need to write about it when I am eating it from now on otherwise I end up wanting it again as I type!

I hear it is asparagus season (at the time of this post), which for us in San Jose, just means it get down to a reasonable price. Because otherwise we have it here all year round. Might not be at its peak, but . . . I like having it all the time. If you don’t know, I love asparagus.

Usually I roast it, but I had chopped it and sauteed it the night before and it workout that we had leftovers, so for this burrito that is what I had used.

So, tell me what do you put in your tortillas? How do you prepare them? Grilled? Micro-waved? Right out of the package? Does anyone make their own? I would love to learn how to do that!!!
