Christmas In July

I’ve heard it said that some people believe that Jesus was actually born in July. I have also hear of “Christmas in July” which I always thought was a marketing ploy. I have not looked up either idea, but at the beginning of the week I was taking a class and the instructor mentioned how winter is the time when our bodies need to slow down and relax. And it dawned on me how absurd it is that we have two major Holidays so close together and in winter. I wish the United States celebrated Thanksgiving in October as our neighbors do. And now I am wishing we had Christmas in July.

A busy, pressured filled Holiday in the middle of summer seems much more logical. The days are long, energy is up it seems right. People could gather outside for cookouts and there could be more gatherings because we wouldn’t be restricted to weekends.  In summer people are willing to do things after work because it is still light and warm. It would also be easier on the people who have a lot of people to buy for because there would be “more time” because it is easier to drive without the threat of bad weather and the days are longer. The more I think about it the more it just makes sense.

Then December could be for what it is actually for . . . it could be a time of rest and “hibernation” we could go into the new year fortified and refreshed.

🙂 I was just kinda thinking it made sense.  Just a thought. What do you think?

Merry Metal Christmas Tree

I have been wanting a metal tree to hang Christmas ornaments on for years. But we have a lot of Christmas stuff and we really try not to add to it, plus the tree itself was rather expensive, but I kept wanting one. I kept my eye on it and every year the price went up. Then I happened upon one that was half the price of the original one I have been coveting. I think it might not be as sturdy, but it has a lot more “branches” and places to hang ornaments. So this was one of my Christmas presents this year.

I thought hanging ornaments on it would be easy, but it is not. I realized that it is good to hang the ornaments that are 360 kind of ornaments. Because the tree is so visible from every side it is nice to have ornaments that look pretty from all sides. I was also a bit cautious because this is the first time we have had it and I didn’t how sturdy it would be and I didn’t know how the cats would react. I don’t think they have even looked at it. It is pretty good they pay it not attention since I move one of their scratching things and put the tree there.  They just go to the new spot to scratch.

I also had no idea how to hang the lights. I strung them from “branch” to branch where I think it would be cool to wrap them around each branch. I am not sure. I like it, but it took some getting used to.  I hope to get better at it each year.

I like the extra added sparkle in the house.

I had taken videos as I was decorating to document what went where in case I did it the same next year. This is the last one starting about 1/3 of the way down.

As you may have seen in my last post I do have other metal ornament trees, but this one is much larger.  Do any of you have a metal tree?

Lenox Table Top Ornament Tree

I am doing a search but I am not finding my little ornament tree having been posted. I cannot believe it. Years ago John’s sister gifted us an ornament from Lenox and it started me on my collection of ornaments from them. For many years I was getting their annual snow flake but the quality kept going down so I stopped that. I have so many and I think they are so pretty they have their own little tree that sits on a table where it is fairly safe. Safe from me or anyone knocking it over.

You may see a theme or you probably know me well enough, I love the sparkles. I was sitting at the table this morning and I took a few pictures and now sitting here at my computer trying to write a post I thought I might as well share.

Christmas Tree Almost Done

How is your Christmas Season / End of the Year going? I am very late decorating this year and also doing less, but it is still so time consuming. Tree Full Of Lights

Finally got the tree up and the lights on tonight. So tempted to just leave it like this, no ornaments, just hundreds of lights! I love a lot of lights on a tree! Pretty much all Friday Photos in December (and even beyond) on Christmas decoration related. I do love my decorations even if I am not really wanting to put them up this year! Will probably do less this year.

Striking Cancer With Thunder – Thunderstruck

I was recently taking a class and the instructor said that AC/DC’s Thunderstruck helps chemotherapy be more effective. I thought about stopping the class (video) to see if I heard correctly, but I was in the middle of it and I didn’t want to interrupt it/myself so I decided to just look it up after class. I was hoping I remembered. Well, I did. That was such an odd claim to me, I wanted to see what it was about. What I found was that there is a specific drug that was found to be assisted by AC/DC’s Thunderstruck.

Are you familiar with the song?

In 2016 scientists at the University of South Australia found that vibration was the key to best getting the drug to where it needed to go. They have another method but it was not as efficient as rock music vibration. As you can imagine there is a lot of music but out of their samplings AC/DC’s Thunderstruck did the job the best.

Since I don’t really understand the details enough to write clearly about them and to be accurate and coherent I would just have to copy the articles I read I am just going to list them, in case you want more details. Surprisingly – to me – there aren’t that many or, more accurately, I couldn’t find that many related to the subject. I figured that once scientists knew the specific vibration they needed then they would have designed something to do it, but I didn’t find much about vibrations and chemotherapy so I am not sure that it has taken off.

Beef Atop Biscuits

So this is one of those posts where it is not really a recipe just an idea of something to do and it is not even a new idea. I, myself, have wanted to do this forever and now that I have done it I have to say it is DEEEE-licious. You may have seen me mention biscuits recently (Chicken, Asparagus, Biscuits, and Cheese Sauce and Faux Chicken Pot Pie). I love biscuits, but most have ingredients that leave me feeling not-my-best so I try to avoid them, but I found a brand that works and so I have been playing with things to cook with them. And recently I made something yummy. I was thinking of making something like a biscuit CUP, but I only have one muffin tin. I was thinking I had more. I tried using aluminum foil and I was going to make little cups with that, but then I realized I didn’t really need it, but I went ahead and used the aluminum foil I had already ripped off the roll.  But since I ended up rolling out the biscuits next time I will just use parchment paper.

Beef Atop Biscuits

olive oil (2 tablespoons)
onion, chopped
ground beef (1.67 pounds – ended up having left overs)
Better Than Bouillon
A tube of biscuits (8)
a can of corn (drained)
2 cups of cheese
garlic salt

Heat the oil, then add the onion. Cook the onion for a bit then add the ground beef, sprinkle with some garlic salt. Break up the beef as it cooks. Add a heaping teaspoon of Better Than Bouillon (I used beef) and mix it in well. Once the beef is pretty much cooked, add in the corn.

WHILE THE BEEF IS COOKING – split the biscuits so you end up with 16. They are layered so try to split them evenly. Use them one of two ways:

Roll them out to about five or six inches in diameter then place them on parchment paper on a cookie sheet OR
Stretch them out to fit in the muffin cups and put them in a greased muffin tin

Once the beef is cooked scoop onto the split biscuit. I was able to put almost three tablespoons on the rolled out biscuits, but only two in the muffin cups. I topped with cheese and chopped onion then baked at 350° for about 20 minutes. You will want to check and make certain the biscuit is cooked.

Some of them cooked better than others, but I knew I would be baking them additionally the next night to heat them up so it worked out perfect.

So good. I meant to put in bell pepper, but I forgot because I switched from stuffing a biscuit into a muffin tin to rolling them out, so I was distracted with the switch.

Again, this is not a novel recipe, so I am sure there are a million ways to make them. I have wanted to do a version of this for a long time and I am glad I did. Since I love the taste of the biscuits so much I am glad I kept the topping/filling simple. Soooo good.

I imagine if you are talented enough to make homemade biscuits this would be even better!!!

I can’t say that I like one more than the other.  It was nice to have a combination of both.  The rolled out biscuits allowed for more beef, but the muffin ones tasted more biscuity . . . so there really was no clear winner.

And, yeah, since I am not a food blogger I am so bad at taking pictures.  I don’t make the food to blog about it, I make the food to eat it.  It is usually past dinner time and I am rushing around to get food on the table so I forget to take pictures.  The cooked biscuits on the plate pictures are actually from the night of leftovers.  You can see how the ones in the container are not as browned.  Our oven cooks unevenly and we at the more browned once and I saved the others for leftovers.

There are so many things to use to top a biscuit!  What would you use?
