Dinner Of Herbs Eggplant Bruschetta

I love eggplant.  I read a blog called Dinner of Herbs and she posted a recipe for Eggplant Bruschetta.  Yum.  I used to not like bruschetta because I didn’t like tomatoes.  But I like it now . . . well it depends.Dance Exercise, Nia, Nia at the City of San Jose, Nia classes in the South Bay, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia, Zumba, PiYo, Gentle Yoga  I like some bruschetta and since I love eggplant I thought I would like this.  As I was making it I laughed because she only listed amounts for two of the ingredients and it turns out I didn’t use the amounts for those that she stated.  Also, I had to laugh–yeah, right!–because I went to the grocery store on Thursday right after my Nia class.  I like to do my shopping while I am already out, so on my way home I stopped by the store.  My WHOLE reason for going was to get the ingredients for the bruschetta!  I even wrote them down.  But while I was there I thought of a few other things and completely overlooked one KEY item on my list.  I forgot the bread.  DUH!  Can’t really make bruschetta without the bread.  I used to think bruschetta WAS the bread.  Then I came to think bruschetta was the tomato mixture.  But bruschetta is the bread topped with the tomato mixture.  Eggplant bruschetta just has eggplant added to the mixture.

Since I like to run all my errands while I am already out I decided to wait to get the bread on Sunday after my rotation of teaching Nia at the YMCA.  HOLY MOLY!  My husband is under strict instructions to remind me never to go to the grocery store on a Sunday.  Geez louise.  I was there over an hour.  It was so crowded.  But I got the bread!  I got two different kind since my husband doesn’t really like bread and he really doesn’t like hard sourdough.  So you can imagine he doesn’t like TOASTED sourdough.  So I got him some wimpy soft bread and I didn’t even toast it.

Dance Exercise, Nia, Nia at the City of San Jose, Nia classes in the South Bay, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia, Zumba, PiYo, Gentle YogaAnyway . . . for Dinner of Herb’s recipe I used a very large eggplant and I cut it up into tiny cubes.  Way smaller than she shows on her site.   I put garlic salt on it.  I roasted it for 45 minutes.  I only used three tomatoes for roasting.  I also roasted them with garlic salt.   Then I added a half of a raw tomato along with about two tablespoons of raw chopped onion to the mix of roasted eggplant and tomato.  I actually always thought that bruschetta was raw tomatoes so that is why I added some raw tomato.

So I loved it.  My hubby ate it.  As I said he is not a bread fan so he was not at all excited about it as I was.  I thought it was delicious.  I think it is so delicious I am going to make it again, but just the eggplant-tomato mixture and put it over pasta.

I am excited about this because – as I just said – it is something else to do for pasta, or heck . . . .anything.  To me it is that good that I would just make it as a “salsa” to put on chicken or pork.

I have to say that I did not take good pictures.  I was kinda in a hurry.  And if you take pictures of food, you know you can’t do it when you are rushed.  So . . . .sorry the pictures are not very appetizing, but if you like eggplant and if you like bruschetta you will love this!

Good Things And Not-So-Good Things

Dance Exercise, Nia, Nia at the City of San Jose, Nia classes in the South Bay, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia, Zumba, PiYo, Gentle YogaWell, I am not doing a weekly post to check in on your Goodie Jar, but I do hope you are still doing it or some variation there of.  Are you?  Are you taking time to recognize the good in life?  I hope so.  I am.  I believe I mentioned that I wanted to us something else to hold my notes regarding the good things.  I have a lot of beautiful bowls and plates.  I decided to use this beautiful blue bowl shaped like a flower.  I think it will be good for another month or so.  I love having this little gem on the counter.  I started off the year using Christmas wrapping paper scraps.  I have other wrapping paper scraps to use and little pieces of paper.  It all adds to the “goodness of the jar” to me.  So far the year is a good one in which to focus on the good things.  As with life there are good things and not-so-good things and that is why we have a good things jar.

I have been teaching Nia at a studio in San Jose where I rent the space.  I have been renting there since January 2009.  At first I rented an hour on Mondays, Wednesdays, and Fridays.  But after six months I decided to just rent Mondays and Wednesdays.  Well, after five years, I have decided to just rent Wednesdays.  So it has been five years of teaching on Mondays at the studio.  Monday, February 24, 2014 will be the last one for now.  Mondays are a great day to teach because on Holidays people who work are able to attend, but we don’t have enough holidays.  It could be that something else will come up for Mondays or it could be that one day I start teaching there again on Mondays, but for now, we will not be dancing on Mondays.

The classes at the community center is growing.  I love that more and more people are coming to Nia there.  Also I enjoyed my short time substituting a Nia class at the YMCA in Mountain View.  I am teaching a Gentle Yoga class on Thursday evenings.  And have been asked to teach another Gentle Yoga class on Tuesday mornings.  So while one class ends a new one begins.

We are going to have to move our after-Nia-Class-visits to Wednesday.  We have one more Monday that we are going to meet.  We have been going to Peet’s on the second to the last Monday of the month for about a year now.  So we will have to move it to the second to the last Wednesday.  I love that our little Nia community gathers after class.  I need to get this type of gathering going with the community center Nia group.

So, I am still putting things in my goodie jar.  Still looking for, finding, recognizing, seeing those good things.  I hope that no matter what is going on in your life you are able to find something good.  Something you want to make a note of so that you can read it later on.  I really enjoyed reading my good things at the end of the year.  Much of it was about Nia but not all of it.  Most of it had to do with love.  People showing ME love and that is MORE than a good thing, that is GREAT.  I hope you have a lot of moments of love that you can jot down and put in your jar.

Shocking Spinach Dip Discovery

For many it is Christmas Eve.  Some might not celebrate Christmas or it is past the day, but here, where I am, it is Christmas Eve.  It is Tuesday so normally I would have had a Nia class in the morning, but the Park and Recreation Department of San Jose took the day off so there was no Nia this morning.  They also have instituted a very abbreviated Group Ex schedule so my Nia classes with the City of San Jose are done for the year.  We will be back Thursday, January 2, 2014.  (WHOA!  2014!)  I have one more Nia class in Willow Glen this year and one more class this year that I am subbing for the YMCA.  Then onto the next year!  So today I had a very relaxing Christmas Eve Day.  Probably thee most relaxing Christmas Eve Day I have had in a LONG time.  It was nice.  One thing I had to do today was make spinach dip.  In my world this is a common party treat.  I have been making it for as long as I can remember.  Although I had not made it in a long time.  I think I first heard about spinach dip when I worked at my first mortgage job in the mid ’80s.  So that is a long time.  Spinach dip seems pretty common and timeless.

Dance Exercise, Nia, Nia at the City of San Jose, Nia classes in the South Bay, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia, Zumba, PiYo, Gentle Yoga, YMCAOne thing I notice over Thanksgiving when I made a quadruple batch was that the recipe calls for a 10 ounce package of frozen spinach.  Well our big green friend now makes his frozen spinach in 9 ounces sizes.  I thought that was funny.  Then today as I happened to be READING the recipe I noticed something that had me saying, “WHAT!?!?!?!?!?!?!?!?!?!”  The directions actually say to COOK the spinach.  I have never heard of such a thing.  I have NEVER cooked the spinach.  And as I mentioned I have been making spinach dip for YEARS.  Cook the spinach?  Really?

I prefer the Knorr Vegetable soup mix.  But one year I couldn’t find it ANYWHERE and I ended up with the SPRING Vegetable mix and that was awesome because it had mushrooms in it.  Now I can’t find that.  I have also used other soup mix and have not been as happy as when I use Knorr.  But this “cooked” really made me laugh out loud.  Here is the recipe I am sure many of you are familiar with:

Knorr Spinach Dip

Ingredients
1 box (10 oz.) frozen chopped spinach, cooked, cooled and squeezed dry
1 container (16 oz.) sour cream
1 cup Hellmann’s® or Best Foods® Real Mayonnaise
1 package Knorr® Vegetable recipe mix
1 can (8 oz.) water chestnuts, drained and chopped (optional)
3 green onions, chopped (optional)

Directions
1.  Combine all ingredients and chill about 2 hours. Serve with your favorite dippers to your favorite people.

Dance Exercise, Nia, Nia at the City of San Jose, Nia classes in the South Bay, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia, Zumba, PiYo, Gentle Yoga, YMCAAlso, for me, the water chestnuts are NOT optional!  They are a requirement.  In fact, to me, the are the best part.  If you watch me getting some spinach dip you will probably see me pushing my cracker/bread/veggie through the dish just trying to get at that chunk of chestnut.

In addition to the change in weight of the spinach they also now package it in a plastic, which helped when squeezing the water out.  After I squeeze the spinach it is all clumped together so I use forks to pull it a part.

So I have two main questions for you:

1)  Do you COOK your spinach?
2)  How do you squeeze all the water out of the frozen spinach?  To me that is the worst part.

Goodie Jar – Check In #42

So here it is Friday again. Time goes so quickly it seems. Only ONE more check in! Wow!

So you might know I was hired on at the YMCA. It is somewhat the same as the City of San Jose was at first.  Right now I am teaching as a substitute without a regular class.  But with the YMCA I am actually subbing for Nia classes.  That is really nice.  The participants are there to do Nia.

Today I had one woman say as she was leaving that I made her smile for the first time all week.  -Oh.-  While that made me happy, Nia and I made her smile, I was also sad, it is FRIDAY and this was the first time she smiled.  I think something is going on in her life so I am so happy that I could allow her a moment of Joy.  I am grateful for Nia that I was able to do that.  So you KNOW, that is going in my goodie jar.

Goodie Jar – Check In #41

The number of Goodie Jar check ins will not match the number of weeks in this year because I missed a few.  I cannot believe there are only two more check ins left.  Wow!  I am excited.  My good things are overflowing.  I am excited to read them.

I taught for the first time at the YMCA this week.  I was subbing a class.  There is a Nia class already and I was subbing for the teacher.  Today I sub again!  Yay!

Cool Facts About The History Of The YMCA

So, as a group exercise instructor one usually has a few jobs or venues to teach at. I have Nia classes at a studio where I rent the space, at a community center for the City of San Jose, and soon at some local YMCAs. In order to teach for the City of San Jose I had to go through the hiring process. Same with the YMCA. Today I spent a good portion of the day at a YMCA orientation. While a lot of the information they cover is common sense and a lot of it is information I have received at almost every job I have worked at some of it was unique to the YMCA. Such as the history of the YMCA. I admit I learned a lot. I knew what Y.M.C.A stood for (Young Men’s Christian Association), but that is about it. It helped that the trainer was clearly very enthusiastic about the history of the Y. As always when I learn something I think is interesting I like to share with you. Plus, when I document it via my blog, I have the information where I can always find it! So here are some facts I thought were cool about the history of the YMCA.

—-The YMCA was founded in 1844 in London, England
—-In 1859 a sea captain led the formation of the YMCA in Boston
—-In 1856 German immigrants participated in the first-known English as a Second Language class
—-Andy Rooney, Dan Rather, Malcolm X, Dr. Martin Luther King, Jr., Jack Kerouac, and Andrew Young (U.S. Ambassador), have all stayed at the YMCA
—-In 1869 the first YMCA buildings constructed with gyms were opened
—-In 1875 in San Francisco, to serve the Chinese population, YMCAs serving Asians were established
—-In 1879 Thomas Wakeman founded a YMCA for U.S. Native Americans
—-In 1917 a Japanese YMCA was founded
—-In 1891 James Naismith, a physical education teacher at the International YMCA Training School, invented basketball
—-In the 1890s William Morgan, a YMCA instructor thought basketball was too strenuous for businessmen so he invented volleyball
—-By 1950 YMCAs operated 20 colleges in cities across the country
—-During World War II, the YMCA staff organized clubs and activities for children in the Japanese Interment camps — all in secret
—-In 1950 Joe Sobek, a YMCA volunteer, invented raquetball
—-In 1967 racial discrimination was banned in all YMCAs
—-In the mid 1970’s the Youth Basketball Association (YBA) was created by the YMCA and the NBA Players Association. The YBA promotes skills and teamwork over winning at any cost
—-In 2008 the YMCA and the Department of Defense and the YMCA partnered to fund memberships and child care services for families facing the hardship of military deployment
—-In 1891 a triangle was used a the logo, the equal sides representing “man’s essential unity, body, mind and
spirit, each being a necessary and eternal part of man, he being neither one alone . . . ”

I especially loved the last one as Nia has many triads and is greatly focus on Body, Mind, and Spirit.  We add Emotion so we have BMES, but it is very much the same thing.  Anyway . . . these are some of the main things I thought were interesting.  Since the YMCA has been around so long it really has a long history.

Goodie Jar – Check In #40

We are into December.  And there are only three more chances for Goodie Jar Check Ins.  WOW!  I think that we should get the lawmakers to pass a law that makes Thanksgiving either in October like they do in Canada or at least the second to the last Thursday in November so that we can have more time between Thanksgiving and Christmas.  I really like more time from Thanksgiving to December.  I am feeling the rush.  Part of it has to do with the fact that I am in the process of getting hired on at the YMCA as a Nia teacher.  There are a lot of things to do to get hired on at the YMCA as there is with many companies.

So I am feeling the rush.  But I still have time to put things in my Goodie Jar.  One of them, of course, is having an additional place to teach Nia!

What to wear to Nia

Since I started teaching Nia classes I have received the question of what to wear to Nia quite often.  For those that have not heard of Nia or done Nia, it is a valid question.  People are not sure what it is and what you do in a class, so they have no idea how to dress.  I have seen a lot of people wear a lot of different things.  I have seen people wear clothes that I would consider fancy “going out” clothes, I have seen people wear “jogging outfits”, yoga clothes, and all types of dance clothes.  I wear a variety of things.  It depends on where I am doing Nia and what it is for.  Most of the time I wear “workout clothes” because I do get sweaty.  Plus we do get on the floor.  So for my “everyday” Nia I wear my tie-dyed T-shirts.  I have a little collection.  And I wear loose pants.  I do have a few outfits that I think of as “Nia outfits” and I usually save those for Nia playshops, Nia workshops and Nia events.  I am working on expanding my Nia outfits.

My answer regarding what to wear is whatever is comfortable to move in.  Whatever makes you feel good, but that you don’t mind sweating in or getting on the floor in.  I like flowing sleeves and pants that swing.  Nia to me is even more fun when your outfit flows and swings.  But most important is to be comfortable and safe.  Some pants are so so long that they can be stepped on and that could be an issue so you want to make sure you can move freely.

Nia is a workout.  In class we move, we sweat, we get on the floor . . . . .so knowing that wear something like that you want to workout in yet that makes you feel good.  One thing you don’t have to think about is shoes.

Nia also has Nia clothes in case you are interested.  They can be purchased through the Nia website, NiaNow.com.

Below is a picture from a Nia Jam* and as you can see people wear what they want.  Nia is about moving your body at your level and in comfort so wearing something that allows you to do that is exactly what you want to wear.
