Super Easy And Yummy Chocolate Toffee

I recently made a “dangerous” snack.  It is actually dangerous as snack, but it really should be considered a treat.  But the reason it is dangerous is because it is so good it kind of leads to overeating.  It is one of those things that is just basically butter, so . . . .well, butter.  I saw the recipe on Facebook, so I bet you have seen it, too.  If you ever thought about making it, but didn’t want to because it was too much trouble, it is not.  It is super easy.  The recipe is from Delish’s Chocolate Toffee.  Super easy, super yummy.  But if it weren’t for the recipe that says to keep cooking it, I probably would have done it wrong.  Check out their recipe and video.  I altered it a bit, of course.

I’ve made three batches.  The first batch was good, but I felt it was missing something.  So for the second batch I added more vanilla and more salt . . . I actually measured and didn’t just use a pinch.  Then the third batch I sprinkled Cayenne pepper on the chocolate chips.  Next time I will sprinkle it on the chocolate.  Sprinkling it on the chocolate chips led to uneven flavoring because then I spread the chips.  The reason I did it that way was because the first two batches the nuts were falling off, so I didn’t want to spend time sprinkling Cayenne.  I wanted to sprinkle the nuts on and get them pressed in a bit before the chocolate set.  But I will have to risk it next time to get a more even heat.  I don’t like heat so I didn’t care for the Cayenne one.  Also, I noticed it just added heat and not really a flavor.

Chocolate Toffee

1 1/4 cup butter
1 1/4 cup sugar
1 teaspoon vanilla
1 teaspoon salt
2 cups semisweet chocolate chips
1/2 cup chopped almonds
1/2 cup chopped pecans
Sea salt for garnish

Cover a jelly roll pan with parchment paper.  Have the chocolate chips ready to go.  Make sure your nuts are chopped and ready to go.

In a pan using medium heat, start to melt the butter.  Then add the sugar, vanilla, and salt.  Stir it up mixing it well, then keep stirring it.  Don’t stop.  Just keep stirring.  The mixture should turn from yellow to amber.  It takes about 15 to 20 minutes.  If it is taking longer the heat is not high enough.  (I find myself turning it up and down.  I don’t want to burn it.)  Set the timer so you don’t stop too soon!

The mixture gets thick and bubbly.

Pour the toffee onto the jelly roll pan lined with parchment paper.  Tilt the pan to get it evenly spread over the pan/paper.  Then sprinkle the chocolate chips evenly on top.  When the chips begin to melt spread them out so they form a layer over the toffee.  Sprinkle with the nuts and salt.  Let set until cold.  Then break it up and serve/eat!

I am going to try a batch with milk chocolate.  I thought that was the issue with the first batch, the chocolate, so I bought milk chocolate.  But once I added the additional salt and vanilla it was great.  But I am still going to try it with milk chocolate.

You’ll see in the pictures, I tried sesame seeds and nigella seeds.  That didn’t do anything for me.

You know I don’t like heat, so help me out here.  My hubby likes heat, what adds a little bit of flavor and heat?

Day Eight Of Your Daily Ten Minute Practice

This is day eight of the Daily 10 Minute Practice, are you still with me?  I am just going to have faith that there are people out there doing it, but they are too busy or shy to comment.  I am keeping the faith that someone is using the calendar (besides me) that I made.  I have a Nia Class and a Yoga Class this morning, but I will comment when I get my 10 minutes in!

Day Seven Of Your Daily Ten Minute Practice

This is a short month, so we won’t even be getting a full thirty days.  And if you are like me and you miss a couple of days that you’ll be getting less, but I still think there is benefit from doing something daily.  Even if it is MOST days and not EVERY day.  What do you think?  I guess it depends on what you decided to make your Daily 10 Minute Practice.  But . . . I am gonna keep going.  What about you?

Going On Five Years Of Good Things

We are doing our Goodie Jar again this year.  Right now it is a divided bowl.  On one side there is paper which we can write the good things on and pens.  On the other side is where we are putting our notes.  It is getting full.  At the end of last year it seemed like we were not adding many good things.  It probably didn’t help that my dad died and we were shocked and thrust into having to do a lot of things we had never thought of and things that took up a lot of time and energy.  But also it could be that the goodie jar got overlooked.  Like many of us, my husband is a creature of habit and he claims his habit, regarding the good things jar, consists of it looking like it did when we very FIRST did it and having it be in the same exact spot.  And for ME, that is an overlooking type of habit.  With the pitcher in the same spot all year long – for me, it tends to blend into the surroundings and I don’t see it.  Ya know, like that item that you have to take to your friend the next time you meet, so you put it near the door.  But after a week you begin to ignore it.  You don’t really see it there any longer, it blends into the surroundings.  So when you finally leave the house to meet your friend you totally forget the item.  Having it there was supposed to remind you, but it became so normal for it to be there, it did nothing to help you remember.  So I like to switch it up.  I like to change the vessel that holds the good things.  I thought keeping it on the peninsula in the kitchen was good because we would see it.  And with it being different it would attract our attention.  Well, at the end of the year it got kinda over shone by other Christmas decorations.  So this year we started out with it on the coffee table in the living room.  It is pretty in our faces.  But as I said, it is getting full.

Dance Exercise, Nia, Nia in the City of San Jose, Nia classes in the South Bay, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia, Gentle Yoga, Group Ex classes, YMCA, Zumba, Nia Technique, SJ City Fit, SJCityFitI am trying to decide what to do.  I am trying to decide on something else to keep the notes in.  Or I might just move some of the notes into another vessel and keep using the bowl for now.  I have so many pretty dishes that are seldom used so having them out with good things in them makes me happy.  I might move it off the coffee table for now.  If so, I do plan on moving it back during the year so that it is in our faces and we remember.  Sometimes it is easier to remember to make a note of a good thing.  Sometime it is helpful if there is a reminder or a prompt.

Either way, I am happy to continue this little project that we started years ago.  This will be our fifth year.  For us we put anything any it that makes us smile.  I think I saw my hubby put a receipt from dinner in there.  I don’t know what he wrote, but I am guessing it had to do with the nice dinner we had.  I was going to put a Dove chocolate wrapper in there.  They have sayings on them, so I saved it and I was going to write on it, but it got mistaken for trash and thrown away.  But the idea is that you can put whatever you want in your jar.

When I was commenting about it on a friend’s post someone asked if I date my notes.  Sometimes I do.  Like the other day when I was excited we had 18 people in Nia and 16 people in stretch class.  I put the date on that note.  But when I was looking at my cats and happy that they are so sweet and I feel lucky to have them, I wrote a note about it, but I didn’t date it.  A receipt or a ticket stub is going to have a date, but a candy wrapper would not.  It is whatever you want.  However you want to document the things that make you smile now and that will make you smile when you read them at the end of the year.

I am thankful to my friend Uptown Girl Denver for posting the practice on her Facebook page back in 2013.  I don’t think she is doing it any longer, but we are still enjoying the practice.

Day Four Of Your Daily Ten Minute Practice

This is the fourth day of your Daily 10 Minute Practice.  WHAT you are doing is up to you.  And you are not necessarily posting WHAT you are doing here . . . you can if you want, I would love to hear.  But I don’t want to put anyone on the spot.  This is the check-in spot for having done what you want to do.  So when I ask about how you are feeling, I am not asking if you feel more relaxed, or have bigger muscles or more flexibility or a more space in your home . . . because with most things 40 minutes might not make that big of a difference.  BUT . . . . having done something for four days in a row, meeting that challenge might have you feeling good.  It might have you recognizing that it is not really that difficult to carve out ten minutes.  It might have you encouraged to keep going so that you WILL see gains in your chosen practice.

Not Quite A Capture Of The Beauty I Saw

For me, since I am not a photographer and I don’t take breath taking pictures, what I do take just doesn’t convey the beauty I am trying to capture.  But hopefully you can see it as pretty.  But it was really beautiful.  Especially since we hadn’t seen sun for a few days . . . which for us, in the Bay Area is an unusual occurrence.  I do love the rain, but this was a beautiful sight.
