Brisket In A CrockPot

I have a friend who buys a grass-fed cow for beef by offering portions to her friends.  So my husband and I purchased a portion.  The meat is really amazing.  If you have read any of my meat posts you know that I prefer to douse my meat in marinades and seasonings.  Well, with this beef I don’t do that normally because the grass-fed flavor of the meat is good.  When I picked up my meat my friend gave me a few choices about some of the cuts.  I know nothing about cuts of meat.  I based my selection on this cut being one or two servings and that cut being three to four.  Of course I chose the value.  Plus a couple of the selections were new-to-me cuts.  So I was excited at the prospect of learning how to cook different cuts of meat.  Well, as I said, I was excited at the prospect.  I haven’t had as much time since I picked up the meat.  I have not spent time learning how to cook both the different cuts AND the way this meat cooks. So I have been cooking the ground beef — A LOT.  I make burgers often.  Used to be I couldn’t get my hubby to want to eat a burger that I handmade, now he LOVES them.  The beef is spectacular!  Anyway . . . I finally have to get to cooking the meat in my freezer so my first attempt — BRISKET.

Can add bell pepper, tomato sauce too. Cook. FYI: I say crockpot because I’m guessing you have one. I don’t use them, so I couldn’t fathom how much time. Brisket is one of my faves. Remember what I said: look up how to cook grass fed. Because this cow was so lean, look up veal. Not the same product, but the cooking is the same.”

I am really not a fan of brisket, unless my friend cooks it.  I had one she made once and I was so amazed.  But as she said, she doesn’t use a crock pot, but I did.

I don’t like cooked bell pepper that much so I nixed that idea and I am also not a fan of tomato sauce so I decided against that.  What I did was I looked up crockpot brisket and found a bunch of recipes.  I looked at the ingredients I liked from each one and decided I would put them together and see what I get.

Here is what I used.  I actually thought to write it down BEFORE I prepared it.

About 3 pounds of brisket
-4 or 5 cloves of garlic, minced
-1/2 cup brown sugar
-1 tsp salt
-1/8 tsp pepper   (1/4 tsp)
-1/2 tsp dry (powdered) mustard   (3/4 tsp)
-1/2 tsp cumin    (3/4 tsp)
-1/2 tsp thyme
-1 tbsp of Worcestershire sauce  (1 1/2 tbsp)

-3/4 of an onion, chopped
-1 tbsp of sherry
-1 bottle of beer
-1 cup water
-1 tsp Better than Bouillon

Mix all the dry ingredients including the Worcestershire sauce together in a bowl, then rub it on the meat.  Cover all of the meat.  Put some of the onions on the bottom of the pot.  Place the meat in the pot on top of the onions.  Put the rest of the onions on top of the meat.  Then pour in the sherry, beer, and broth (I had mixed the water with the Better than Bouillon).

Sprinkle more cumin on top.

Set it on low and cook it for 5 hours.  (I will cook it for less next time.)

Dance Exercise, Nia, Nia at the City of San Jose, Nia classes in the South Bay, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia, Zumba, PiYo, Gentle YogaWhen I looked up brisket I saw times from 6 to 9 hours.  So I had been planning on cooking it for 5 hours.  But then I looked up veal and it said 7 to 9 hours.  So I set one timer for 7 hours and another for 5.  At 5 hours I checked on it and it seemed done so I turned off the crockpot.  I will cook if for less next time because, as you know, it keeps cooking even after you turn off the heat.  I will also remove the crock pot from the heat next time.

The meat actually came out moist and fine.  But I would like it a little less cooked.

My husband loves meat, especially beef, so he loved it.  He kept making yummy noises.  And I actually observed him eat the meat except for one piece. Then he eat everything else then the last piece of his meat.  He saved it for last.  He wanted to savor the last bits.  As I have said before, I am blessed because he likes pretty much anything, but he loved this.

The amounts in parenthesis are the amounts that I am going to use next time.  I want a little more flavor.  But I am happy with my first cooking of brisket.  And now you know what?  Yup, my favorite . . . . leftovers!

Goodie Jar – Check In #33

Hey!  Yay!  Two Fridays so far in October, two Goodie Jar – Check Ins!  Yay!  I do put things in my jar at least once a week, but there have been a couple of times when I forgot to post the check-in.  At this time I am writing the check in on Thursday because I have a Nia call I want to participate in on Friday.  I think I might get so involved in the call and its topic I will forget to post my check in.

So, how is it going?  On last week’s check in a friend of mine commented that her jar would be over flowing because her daughter just had a daughter.  First grand baby cute.  Not everyone has such a huge GOOD THING.  But that is kinda the point.  The HUGE good things get document and noted in other ways . . . so sometimes it is the jar that reminds us of the little things.

Of course, we can still write down the big things and put them in the jar.  Anything you want.  Anything that will make you smile when you read it and say, “Yeah, that is/was a good thing!”

May your Good Thing Jar overflow!

I Give Up, What Does The Fox Say?

This past week there was a video posted on Youtube that went viral.  And I am just giving in and posting about it, because, honestly, it is stuck in my head.  It was posted on September 3, 2013 and it has over 7.5 million views.  Wow!  It is hilarious.  It was posted on Facebook, that is where I saw it.  A fellow Nia teacher posted it.  Then several of my friends posted it.  As I mentioned, the first one I saw was a Nia Teacher , she was daring other Nia Teachers to create a dance using it.  It already has some great choreography.  It is one of those videos that you watch the first time in total and utter disbelief.  It starts out as funny, then it just gets more and more funny as it goes on.  Then you have to watch it again because it is just so hilarious.  Then you just watch it again because you can’t believe it.  It is just funny.  I honestly didn’t even notice the dancing until about the fourth time.  The first time I almost choked on my lunch.  Then next two times I was laughing so hard I couldn’t see.  I also was staring at the words.

Goodie Jar – Check In #27

Hey we are INTO August!  WOW!  And we are at our Friday Check-In.  So?  How is it going?  I have a lot of Good Things to add to my Goodie Jar.

I have one thing I should put in my jar because every time I use it I am so very grateful.  I love showers.  They are one of the best privileges on earth . . . I think.  I need to put that in my goodie jar.  I think they are damn good things.  Aside from that I had some good things go in that jar this week.

One of the good things I had happen this week was something amazing by my Nia Students at the community center where I teach on Tuesdays.  I shared this on Facebook, but I will share it here too.  After class one of my students mentioned to me that the class that was being held on Thursday mornings was being cancelled so she asked if I would want to teach Nia in that time slot.  I said yes.  So she asked how to get it as a class.  I told her she needed to talk to the person in charge of the classes at that San Jose City community center.  I told her to write a note for her or send her an e-mail.  She wrote a note and had the students sign it.  I thought that was so cute.  She said she thought it would prove that the students really wanted an additional Nia class to be on Thursdays if they all signed it.

Before I got home the person in charge of the classes at the community center called me to let me know we can give it a go!  So awesome.  This is definitely a good thing for my jar!

Smashed Banana Eggs

Dance Exercise, Nia, Nia at the City of San Jose, Nia classes in the South Bay, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia, Zumba, PiYoI first saw this recipe via a post on Facebook.  A Nia friend had shared it from a group on Facebook.  Neither my friend nor the person on the group had made them.  I was not planning on posting about them.  I know I say that all the time, but this recipe looked so quick and easy I didn’t really think there would be much to say about it.  But I found that I needed to make some adjustments to the recipe in order for it to work for me.  The directions in the post just baffled me because they instructed to cook the “pancake” for 20 to 30 seconds.  As mine were cooking and I was standing there diligently waiting to flip then, I wondered what type of stove the person had.  I wondered what type of pan.  I wondered if they liked raw eggs.  The food in my pan was no where near cooked much less in a state that could be flipped at 20 to 30 seconds.  Because I often think I will not post about something, but then I end up wanting to, I did actually take pictures from the beginning.  But then near the end of the cooking process I was more convinced I would NOT post so I didn’t get any good shots.  But as my hubby was eating them I decided to share.  I don’t want to call these pancakes because they are not “cakey” at all.  To me when I hear banana pancakes I picture pancakes with bananas in them.  So I am calling them Smashed Banana Eggs, because that is exactly what they are.

Ingredients:

1 banana
2 eggs
salt
butter/oil

Smash the banana in a bowl.  Smash it so much that it is soupy.  Then add the eggs.  Mix it all up like a scramble, including the tiniest sprinkle of salt.  Heat the butter or oil in the pan.  When it is hot pour the smashed banana and eggs into the pan forming small circles.  Wait until the circle can be moved around the pan.  When you are able to slide it then you can flip it.*  Flip and cook on that side.  When you think it is ready.  Serve it with your choice of topping.

I like mine browned.  I cooked them for a long time.  I kept flipping them back and forth.  As I have mentioned many times before the great thing about a recipe and cooking is you get to decide how to do it.  A recipe is a guide but you know how you like your eggs and/or pancakes cooked so you decide how long to do it.  With me, since some of the circle didn’t survive the flip intact, I had little pieces that which I could taste so while I was cooking I was able to decide how cooked I wanted them.

As with all of my experiments with food I am a little nervous getting my husband to try it.  So I asked if he wanted to try something new.  He said ok but asked what it was.  At the time I didn’t have my new name figured out so I just said it was kind of like a pancake but not really.  So then he asked WHAT was in it and I said eggs and bananas that is all.

He was eating his while mine were still cooking.  And he was saying that he had them before.  He said his aunt in Hawaii made them for him.  Sounds right to me.  He really liked them.  I think he likes them because they are tasty, but I also think that they are something from his childhood so that makes them even yummier.

I just served them to him with butter.  But I was trying to figure out another way, so on one of mine I sprinkled some cinnamon.  That was really good too.  As I mentioned in the “recipe” serve them with whatever you want.

I am going to say that they are a bit rubbery, but that could be because I cooked them so long.  I don’t mind rubbery, I just mention it because I want you to understand these are not pancakes.  They are not bready.  They are eggs with smashed bananas in them.  I will be making them again.  They were really good.

Just so you know, the recipe above ended up making about 4 thin 5 inch “circles”.

Relief From Too Hot To Sleep

I am so grateful that all of the Nia classes I teach are in air conditioning because it is has been really hot the last few days and the weather predictions for the next few days are just as hot if not hotter.  I know that a lot of areas get hotter than us, but we usually don’t have such hot weather.  Since the San Francisco Bay Area doesn’t always get into the triple digits it is not uncommon for people to NOT have air conditioning.  We don’t have air conditioning.  Usually with the few days of heat that we do get it is ok.  Our traditional — and wonderful, I might add — weather patterns consist of cooled off nights even when the days are blistering.  But sometimes or when the days of heat drag onto six or seven days in a row, it just doesn’t seem to cool off and it makes sleeping difficult.  I often see posts on Facebook and tweets on Twitter about how people can’t sleep because it is too hot.  When it has been too hot for me to sleep it is usually immediately.  As in when I go to bed it is too hot for me to fall asleep.  I have a little method of cooling down that at least allows me to sleep.  I wanted to share it in hopes that it might allow you, if you are too hot, a few hours of sleep.

Even if this is not new to you or sounds elementary, it might help someone.  I know when I mentioned it to someone once they said, “Oh, I never thought of that.”  So — hey, it might help.

So what you do before you go to bed is take a cold shower.  As cold as you can stand.  Now I don’t know what it is about showers, but the other day I got into take a shower and even though the weather was really hot I started taking a warm shower, then I realized that it was really hot and I should try a cool shower at least.  So when I say take a cold shower, I really mean COLD.  As in jump-in-the-pool-stop-your-breathe type of cold.  Now if you are actually taking a shower than I supposed that would be long enough, but if you are just in there to cool down stay as long as you can to actually get cool maybe even chilled.  Once you are done don’t dry off all the way.  Yeah, that is the big part of this.  First cool your body down.  Drop your temperature as low as you can in cool/cold water then don’t dry off.  Then set a fan up to blow on you while you are in bed.  Then go to bed, wet hair, damp body, and all.

Part of the sleep process is lowering your body temperature so when it is hot outside and your body can’t cool down it makes it difficult to sleep.  But if you HELP your body’s natural sleep process by cooling your body down you are a step closer to sleep.  The fan is an added bonus to help keep you cool.  Of course have the air blowing on you however you prefer.  I don’t like it on my face and I don’t care for it on my back so often I just have it on my feet, either in a constant rush or the breezy kind.

So this is a simple procedure that might assist you in getting to sleep.  For many people once they are asleep they can stay asleep, but if you wake up because it is too hot at least you got a few hours (hopefully) in.  You could always repeat the process if you’d like.  Usually it helps me get through the night.

Quick Easy Baked Avocado Breakfast

Dance Exercise, Nia, Nia at the City of San Jose, Nia classes in the South Bay, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia, ZumbaI had seen it on Facebook.  You’ve probably seen it too.  I am not sure who I saw originally post it.  But I bought avocados because I knew my husband would love it.  Then I had company for a week and didn’t make it.  Breakfast doesn’t happen for my hubby around here during the week.  I had been meaning to look up the recipe when another friend posted a picture of hers on Facebook.  She told me to bake them at 450° F for 10 to 12 minutes.  I bought small avocados thinking since he would be eating en entire avocado it would be better to eat a whole small avocado than a whole big one.  I didn’t think about it being too small for the large egg.  When I actually went to make these that is when I realized I should have bought the larger avocados.  I didn’t remember my friend saying anything about making more room for the egg so I looked up some info.  I found a lot of recipes on the web.  Just like me, when people see it, they do it then the post about it.  My friend topped hers with bacon.  Don’t tell my hubby because one of the GREAT things about this is that it is sooooo easy. Bacon would just add another component to complicate it and be messy.  Right now it is so quick and easy I can make it for him all the time!  He loved it so much I made it two days in a row!

Here is what I did:

1 small avocado
2 eggs
salt and pepper

Turn on oven to 450° F.  Put some aluminum foil on a baking sheet.  Put the avocado on a flat surface and find the best resting sides.  I actually smashed it a little to make it flat on two sides so that it would sit level in the pan and not spill out so much egg.  Cut the avocado in half, take out the seed, make more room for the egg by scooping out some of the avocado.  Put the avocado on the foil on the pan.  Crack an egg and put it in the avocado half.  One egg per half.  Add salt and pepper.  Bake for 12 minutes.  Check it and see if it is how you like your eggs.  I cooked the first batch for 14 minutes.  The second day I cooked them longer (2 minutes) and the yolks weren’t runny.  So I am going to settle on 14 minutes.

You can probably tell from the pictures that a lot of the egg white ended up on the foil the first time.  To me that is just as if it were a fried egg and hubby didn’t complain about eating it.  The first set of avocado eggs was served with pico de gallo.  We had some leftover so my hubby topped them with that.  You might also be able to see the plain lump of avocado on the plate.  That is the amount I scooped out from both halves.

The next set of avocado eggs, the next day, were just topped with scallions.  Also less egg white because I decided to have it for my breakfast.  Shhh . . . again, don’t tell my husband.  Some of this stuff really needs to remain between you and me. 😉

After he ate them we discussed topping them with cheese.  I am sure ONE of these days I will top them with bacon for him, but I am not doing to make that the norm.  As I said, this recipe is so easy I don’t want to complicate it with bacon.

As I have posted before avocados are soooooo good for you.  They have incredibly UNIQUE fat so I consider this a healthy breakfast.  Also considering it will not be made during the work week and more than likely not every weekend, it’s great.  The next time I make it, I might even taste it.

Sense Your . . . . .

In Nia we often say while dancing, “Everybody sense your . . . ”  (For more see: Nia White Belt Principle #13  Teaching What You Sense.)  This is to help bring attention to specific body parts.  It could be because we are doing a specific move and we want to have the student’s attention on that body part.  It could be that we feel a body part just needs attention.  It could be that we want the students to move in a different way.  Sensing a body part though does not require movement of that part.  If I were to say right now, “Everybody sense your hand.”  I wouldn’t necessarily mean for you to move your hand.  I mean for you to sense it.  Recently on Facebook I posted, “EveryBODY sense your trachea!!!!!! Breathe . . . . . . . .” and one of my friends asked HOW?  Fabulous question.  How do you sense your trachea?  No, really how do YOU sense your trachea?  How do you sense any of your body parts?

Dance Exercise, Nia, Nia at the City of San Jose, Nia classes in the South Bay, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia, ZumbaAs I said, sensing a body part does not necessarily mean moving it.  It could, if that is how YOU bring attention to a part and if that is how YOU sense it.  It could mean you LOOK at it.  Maybe looking at it helps you sense it.  It could mean you touch it because you want to cause it sensation so that you can sense it.  There are many ways to sense a body part and we all have different ways of doing it.  Some might start with closing their eyes and picturing it in their head.  Some might just think of it and be able to sense it right away.  Part of the practice is the discovery of how we sense different body parts.

For sensing your trachea I thought that one way an individual could do it was by breathing.  That might help you sense your trachea.  Sensing your breath coming in and out might help.  Maybe coughing would help?  Maybe meditating on it?  Maybe touching it?  There really are so many ways to do it and it is up to the individual.  Sensing body parts could even take practice.  Maybe each body part is different.  Perhaps you can easily sense your hand without looking at it, moving it, or touching it, but since you might not often “sense your trachea” it could take a little bit of thought and practice.  Again . . . . the wonderful journey that is Nia and sensing your body.

Often times we don’t even give a second thought to a body part, unless it is in pain.  Unless it SCREAMS at us for attention we might never stop to listen to it.  We might never stop to sense it.  There are so many reasons to sense your body . . . I have already stated just a few that might come up while in a Nia Class.  I am sure you can think of many others.

This is one of the things we do in Nia that can be carried out into life and as we like to call it as we “dance through life”.  This is one of the things you can do that makes Nia “practice”.  You can practice sensing your body parts throughout the day.  Back to the “pain” part of attention . . . say you have pain in your knee, you are going to want to sense it as you move throughout your day so that you can move in a way as to not cause more pain.  Another example if you’re wanting to straighten up your posture a little bit you might want to practice sensing your spine or your shoulders during your day.  As I said, many reason to play with and practice sensing your body parts.  And it really is an individual thing.  You do it in your own way.

Starting with body parts you can see and touch might be a good place to start if you are needing a suggested starting point. That way looking or touching can be the beginning of the sensing journey.  Either way, if you let yourself be open to it, I am sure you will find a way.

Sound Healing and Labyrinth Walk

Wow.  This past weekend I went to an event a friend of mine invited me too.  It was very cool.  I had learned about walking the labyrinth not too long ago (about four years).  I found it very fascinating.  I love that you just walk the path and it is yours.  You walk, you experience whatever it is you want to/need to experience.  There are many different types of labyrinth.  The first one I experienced was at the Center for Spiritual Enlightenment in San Jose, CA.  The labyrinth was in their garden.  Their garden is an oasis in the middle of a noisy city.  Dance Exercise, Nia, Nia at the City of San Jose, Nia classes in the South Bay, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia, ZumbaThe labyrinth I walked on Saturday was at a church, First Congregational Church.  It is a stone labyrinth. Walking the labyrinth alone is a special thing in itself, but this event was sound healing while you walked the labyrinth.  I had heard of sound healing before but didn’t really have an idea of what it was.  I really had no idea what this event would be like, I just wanted to go because the one time I walked the labyrinth I really enjoyed it.  The event was planned two months ago and in those two months . . . .wow!  At this time I am just going to say that I felt this was the PERFECT time for me to be attending this event!  There were four women that played their Crystal Singing bowls, drums, rattles and other sound healing instruments while we walked the labyrinth.  It was a wonderful experience.  Their intention is to hold this type of event every other month.  I will be posting the information as I learn of it so anyone who wants to join can do so.

Dance Exercise, Nia, Nia at the City of San Jose, Nia classes in the South Bay, Nia Teacher, Nia Class, San Jose Nia, Nia San Jose, Nia workout, Nia, ZumbaCrystal Singing bowls are very beautiful LOOKING and I was attracted to one so I went over to talk to one of the women about it.  Since I didn’t know anything about the bowls I wanted to learn more.  She shared with me the vibration of the bowl called “The Divine Mother”.  She told me what it was made of and shared the sound with me.  While she made it sing I was holding it.  It was very warm.  Then she had me hold it in one hand and strike it with the mallet.  Then she took the bowl and held it in her hand and struck it while I held my hands close to the bowl but not touching.  That was amazing.  I felt the energy, the vibration from the bowl push against my hands.  I had to give a little resistance so my hands did not move away from the bowl.  The sound is very beautiful, but I was very intrigued by the energy coming from the bowl.  She was very kind and she allowed me to experience this for a while.  Then she had me turn in a circle while she moved the bowl up my body and down my body.  It is kind of surprising the force I felt from the bowl as she did that.  It was not strong as if to move me, but there was something and that really surprised me.  I felt the vibration from the bowl.

At this time with what is going on in my life and what is going on in the world, I am open heartedly accepting it as healing sound and vibration.  What is really is and what you want to believe is up in the air and up to you.  I am just sharing that I knew nothing of this type of “healing” and was really just surprised and amazed by the sense and the feeling I got.  I was just WOWED!  Really.  And I felt really good and relaxed after.  The morning was emotional and a bit stressful and after that little session I was back to relaxation and joy.

So, a portion of my walk in the labyrinth was that of thankfulness and pure gratitude.  But it was a — to me — a big labyrinth so I was also able to concentrate on some healing thoughts for someone else.  Then while I walked I began so sense my feet and I took a little time to focus on self-healing.  I walked the labyrinth both ways so I was able to do what I felt necessary.

Whew!  It was an awesome experience.  I look forward to attending more walks with sound healings.  I will put the information regarding the next event up somewhere (here, my website, Twitter or Facebook) when they have the details worked out and have let me know.  So check back if you are interested.  I honestly can’t wait.  I really felt some healing from the lovely sound and enjoyed the walk and the support of all those that gathered.

Goodie Jar – Check In #12

Here we are at Goodie Jar – Check In #12.  I really do hope you are finding at least one good thing to note and put in your jar.  Find the silver lining if that is what you must do.  But there has to be something that when you look back at it, it would make you smile.It could be something as silly as a website or a meme you’ve seen on Facebook.  There are so many that get passed around.  You could note the URL and put it in the jar then on December 31, 2013 when you are reading all your notes you can go look it up.  If it made you smile once I bet it will do it again.  Here is one that makes me laugh.  I had to look it up because we do a “penguin dance” in one of the Nia Routines I am doing and I was wondering what noise a penguin makes.
