Butternut Squash Soup Adaptation

Yesterday, after my Nia class in Central San Jose, I went to Campbell to pick up some locally “grown” honey.  It has been pretty cold here so I have been drinking tea and I was thinking soup.  It was at the last minute and through a chance of “well this light is green so I will turn this way” that I ended up at Trader Joe’s.  I don’t get to Trader Joe’s often because it is just not in my regularly traveled areas.  I didn’t know what I was going to get there until I saw the package of cut butternut squash.  Then I was on my phone trying to find the recipe so I could make certain I got all the ingredients for butternut squash soup.

I have made this soup at least twice before, but the last time I made it I put too much pepper in it.  Probably not even as much as the recipe calls for, but it was WAY too hot for me to eat.  I was soooooooo disappointed.  But at least it didn’t go to waste because my hubby loves spicy hot food so he ate it.

I remembered from the times before that one package of cut butternut squash is about 6 cups of squash and that is what the recipe calls for.  With Thanksgiving coming I thought that we could just eat it all week if I doubled it.  I am fortunate in that my hubby doesn’t mind eating the same thing over and over.  So my plan was to make a double batch.  But my plan was also to not follow the recipe exactly.

Before I had made it the very first time, I had read the reviews and I believed what the majority of them said so I was already adapting, but I was even thinking of more modifications.  The problem is I don’t always know what I am going to do until I do it.  As I am cooking an idea will pop into my head and then I don’t always remember what I did when it comes out great.  I thought to write as I cooked but I didn’t.

After I sat down to eat it though I decided I had to make note of what I did because to me and for me, this is the best batch I have made and I want to make it EXACTLY like this from now on.  Please excuse me for being brand specific.  Normally I like to be more Rachel Ray than Martha Stewart, and I will say use whatever, but for me, I am going to use these exactly ingredients to make this soup.  I really think that these particular flavors are what made it so yummy.  But you of course are free to use the brands and flavors you like, but if you don’t want to lick the pot when you are done than it really might be the brands.  😉  I would have taken pictures of the cooking process had I thought I was going to post about this. Dance exercise, Nia classes, San Jose Nia Classes, Nia classes in the San Francisco bay area I had thought NOT to post, but then after I ate it, I realized I HAD to post just so I would have record of it.  The pictures of the products are after I fished the packages out of the garbage.

Butternut Squash Soup Adaptation

Two packages Trader Joe’s cut butternut squash (2 lbs each)

Olive oil spray

salt

4 tablespoons butter

1/2 cup chopped onions

1 box (32 oz) Trader Joe’s Low Sodium Vegetable Broth

4 packages Trader Joe’s Savory broth – chicken flavor

3 1/2 cups water

1 tsp marjoram

6 turns of the smoked pepper pepper mill

two light sprinkles of cayenne pepper

1 8 oz package cream cheese

2-3 tablespoons of whipped cream cheese

dance exercise, Nia teacher, Nia class, Nia San Jose, San Jose Nia, Nia in the San Francisco Bay, South Bay NiaHeat the oven to 450.  Spread the squash on a pan or two, spray with olive oil, sprinkle with salt.  Roast the squash.  The goal is to cook it until it is soft, but it is nice to have some of it browned.   Roast for at least 30 minutes.  Flip, stir, or shake so as to move the squash around a bit.  Here is where you decide how roasted you want your squash.

Melt the butter in the stockpot, add the onions, and a little salt.  Cook the onions until tender.  Put the roasted squash in the pot, add the box of broth, add the water, add the contents of the broth packages, add the marjoram, add the pepper, sprinkle the cayenne.  Bring to a boil.

Take the pot off the burner and blend the soup until smooth.  (I use the immersion blender).  Add the cream cheese.  Stir.  Blend until the cream cheese is full incorporated in the soup.  Depending on how long it takes you to blend the soup and how hot you want to serve it.  You might have to put it back on the stove.

This recipe makes a nice creamy squash-flavored soup.  It is not sweet, but it is not spicy hot.  If you like spicy hot you can add more pepper.  The actually recipe on Allrecipes.com calls for a 1/4 teaspoon ground black pepper and a 1/8 teaspoon ground cayenne pepper.  That is too hot for me.  I just put a few twists and a sprinkle.  The thing about making the pot mild is that people can add their own heat.  My hubby sometimes adds hot sauce.  But then sometimes he doesn’t.  He can decide.

As with any recipe, of course, you can modify it as you want.  But for me THIS IS IT!  Also as with anything, I would love to hear what you think.

Chinese Dumpling Soup – Super Easy Soup

I have been slowly learning a new Nia routine.  I worked on it this morning then right before dinner I decided to do a few of the katas that I are challenging me.  I knew that dinner would be easy because it is FINALLY soup weather in San Jose, California and I made Chinese Dumpling Soup last night and I was just going to add a little more broth.  Well, I ended up adding a little more than that.  After I first had this soup, which I first mentioned in my Ginger post, I wanted it again.  I made it once and I wanted to post about it then because it is so good.  But normally I only like to post recipes when I made adjustments so it can be more like my own and not like I am just copying someone else’s recipe, but I really haven’t made any adjustments to this soup.  It is so good.  This time I did add some mushrooms.  Ya know, have you ever had that soup at a Chinese food restaurant with paper-thin mushrooms in it?  That is what I was thinking of so I sliced some mushrooms and put them in the original cooking and them more tonight when I added more broth and more spinach.  This soup has so many flavors going on it is really a wonderful thing.  I am going to make it and eat it without the dumplings (pot stickers).  My hubby doesn’t want me to omit the pot stickers, but it is such good soup he will forgive me.  I know he will.

Chinese Dumpling Soup

Ingredients
8 cups water
8 teaspoons Better Than Bouillon low sodium chicken bouillon
2 inch piece fresh ginger, peeled and chopped
1 tablespoon soy sauce
1/4 cup rice vinegar (although you can use sherry, which I am sure I will have to do one day)
1 tablespoon balsamic vinegar
2 teaspoons sesame oil
1 teaspoon sugar
sprinkle of salt
about 1 cup Julienne baby carrots
24 frozen Chinese dumplings
3 scallions (white and green parts), thinly sliced
4 cups bag baby spinach

Directions

Heat the eight cups water, stir in the 8 teaspoons of bouillon.  Add the ginger, soy, wine, vinegar, sesame oil, and sugar.  Bring to a boil. Lower the heat and let simmer for about 10 minutes.

Add the dumplings and cook for about 5 minutes.  You might want to adjust the heat up a bit since the frozen dumplings will bring the temperature of the liquid way down.

Add the carrots (I like them crunchy).  Turn the heat down a bit and cook for about two minutes.

Then add the spinach, sprinkle the salt in, and add the scallions.  Let the spinach wilt, about a minute.

Get your taste buds ready for some super yumminess and serve.

dance exercise, Nia teacher, Easy Soup, Nia San Jose, Nia workout, Nia classes, Nia classes in the Bay AreaWell, now that I have typed it up, the directions on the site are a bit different than mine, I am sharing with you the way I do it.  But basically it is from the Food Network Cookbook and website.  I don’t like my carrots really cooked so I add them after the dumplings where the site and the book say to add them before and cook them longer.  The site also suggest cooking the soup without the pot stickers and just have them on the side.  That is what I am going to do.  If my hubby wants them in the soup he can put them in there.  The way I cook them added them to the soup would add ANOTHER layer of flavor and probably make it better anyway.

The soup is really, really, really easy and without the dumplings is has to be really low in fat.  With the spinach you are getting a good amount of greens.  YUM.  This soup is really good.  One of those foods that has you thinking about it.

Well, the recipe this book came from is from a book I bought for my friend and she has made a few recipes in it for me and they have been really good.  I would recommend this book to anyone that likes to use cookbooks.  What made me get it for her is that there were simple recipes in it (she has kids) and because it shows “additional uses” for some of the ingredients you might not know what to do with.  If you buy a can of tomato paste and use two teaspoons, it shows you other recipes in the book that also use tomato paste.  I thought that was so cool because I often end up with leftover ingredients.  As it turns out I love this book because it has this soup recipe in it and I love this soup.

Nia Temporary Studio – Because We Love It

If you follow me on Twitter, are a Facebook friend of mine, or look at my website, you will have seen that my Nia students and I have been doing Nia in the park.  I teach Nia at two different facilities.  There is my Monday and Wednesday class that meets at 9:00 am.  We meet in a little dance studio in an area of San Jose called Willow Glen.  The studio is about 900 square feet, it has a laminate floor and a large mirror.  It is long and slightly narrow.  It is a nice little place.  I have been teaching there for over two and a half years.  Some of my students have been dancing Nia with me for that long.  In November of 2010 I started teaching Nia on Fridays at a different studio in Los Gatos.  It was a different type of studio . . . it was more of an exercise studio where exercise classes are held.  They had a separate room for Pilates Reformer classes.  Well at the end of August this studio said they were moving.  When they would be done with the move and how it all was going to work was very up in the air.  At one point I was told by one of the owners that we would only miss one Nia class.  So I just decided that one class would be ok to miss.  It would not be worth the time involved to secure another place to hold a class.  But then the next week we were told it would be at least another week.  So I asked my students if they wanted to hold a class in the park.  Many students are wanting to participant in Nia three times a week so they said yes.  We decided to try it.

Well, I think that not having Nia that one Friday really helped us all realize that we do like to have it three times a week.  Monday, Wednesday, and Friday just seems pretty perfect.  On the Friday we met in the park we didn’t know how it would go.  We didn’t know if the weather would cooperate.  We didn’t know if there would be too many people for us to dance on the volleyball court.  See that is one thing, I have often entertained the idea of do Nia in a park, because grass really sound likes a great place to dance barefoot.  Natures cushioned dance floor.  But I have always been concerned about holes, bumps, and ruts.  The thought of someone turning their ankle on the grass has always kept me from following through with it.  Plus, the idea that was tossed about had always been an evening class.  I imagine parks being really busy in the evening.

This park that we have been at is really close to the studio in Willow Glen.  There is a basketball court and a volleyball court that have been empty in the mornings.  I imagine the basketball court is occupied in the evenings, but while we are there it is empty.  The volleyball court is somewhat in the shade and provides us with a smooth flat surface to move on.  The park seems rather busy the hour before we arrive.  Seems like many loving dog owners take their dogs out for morning exercise.  There are mother’s and children at the playground.  We have had to dance without music when the lawnmower has obliterated the sound.  But that was only once or twice for a song or two.

The studio has been closed for longer than we had anticipated.  So we have been doing Nia in the park for four weeks.  The weather has been very nice.  Once it was warmer than we like, but so far we have had great temperatures.  This week it is raining.  The forecast is saying that it will be sunny on Friday, but we will see.  The studio has also announced that it will not be open for two more Fridays.  So we might get this week in at the park and next week.  I have been leaving it up to my students.  If they tell me they are going to be there, then I say, I will be there too!

I have really enjoyed our time at the park.  I sort of wish that we could do it there all year, but with winter coming, although winters in the San Fransisco Bay Area are not full of snow, we do get rain and I don’t think we want to dance in the rain.  So I am sad that our time in the park is ending.  I hope that we will be inspired to do Nia in the park again at some point after these next two weeks.  I am really doing it because my students wanted to do it because we love Nia.  I know that some classes take place on the beach and other outdoor places.  I am so happy that I have been able to experience Nia outdoors and share it with my students.

Easy Dinner – Yes, Please!

After I taught my Nia Class in Willow Glen I had some shopping to do.  After shopping I rushed home because I was going to meet a friend in the afternoon back the way of my class, but I thought would shower so as not to offend her.  It was pretty warm here.  As is normal for a hot day, the late afternoon early evening is the hottest.  So as I was driving home from my visit I was not looking forward to cooking dinner.  I had chicken thawed in the fridge, but what else to cook?  I ended up visiting longer than I had planned and getting stuck in traffic on the way home so I didn’t want to stop to get anything to add to dinner because it was already late.  All the way home I was wondering what to cook.  When I got home it was really hot.  I thought it would be best not to turn on the oven or the stove.  I had an idea that maybe using my electric skillet would be cooler.  I do believe it was.  Although this is a common dish cooked in a crock pot or the oven.  When you have limited ingredients sometimes dinner is really easy.  I have found that with limited ingredients I come up with come pretty good meals.  Some end up being regularly cooked meals.

Ingredients:dance exercise, Nia teacher, Nia class, one pot dinner, easy dinner, healthy dinner, meat veggies rice dinner

-A little over a cup of rice
-32 oz broth
-1/2 cup of sherry
-1 tablespoon of worchestire sauce
-1/2 tablespoon soy sauce
-1 tablespoon marjoram
-1/2 tablespoon powdered garlic
-two large chicken breast (skinless, boneless)
-bag of green beans
-salt and pepper to taste**

I put the rice in the skillet with about half of the broth and turn the skillet on to its highest setting.  I started to cut up the chicken into bite size pieces.  When most of the broth boiled off, I added the rest of the broth, the sherry, the worchestire sauce, the soy sauce and stirred, then I added the marjoram.  I turned the heat down to the lowest setting.  I finished cutting up the chicken, then put it in with the rice I sprinkled the garlic on the chicken with some salt.  I turned it to the middle setting.  I let the chicken cook until it was almost done, then I added the green beans.  I stirred them into the dish and let it cook until they were done.

If you know me, you know I don’t like pepper — at all.  But my friend gave me some smoked pepper, which seems very different than regular black pepper.  It helped finish the dish off perfectly!  I brought the grinder to the table though so we could pepper our food separately.  My husband loves pepper.

I wasn’t planning on posting about this so I wasn’t keeping track of the time, but I think it all took about 30 to 40 minutes.  That is what I will plan on in the future, but I will keep an eye on it to see.  I am looking forward to using different veggies.  Frozen green beans is all that I had.

The last time I cooked an all in one dish I used the oven and I used brown rice and canned soup.  The rice was a bit crunchy still but I didn’t want to cook it longer because the chicken was done.  So that is why with this one I started the rice first, although this time I used white rice and it could have been less done.

I am working my way away from using canned soup so that is why I used broth and it came out great.  With the oven cooked dish I used broccoli.  I am looking forward to trying different veggies in the skillet.

I had forgotten about the electric skillet even though my parents use theirs all the time.  I am glad it was hot and I was at a loss of how to cook dinner because now I am going to start using my electric skillet more often.

**09/10/11 — This actually made quite so we ate it a second night. On the third night it seemed as if all that was left was rice and green beans so I sauteed some baby bok choy and a can of chicken then put the left over rice and green beans in the pan and heated it up. Wow! I think I am a fan of baby bok choy!!!

09/12/11 — I didn’t take a picture while I was cooking it because I didn’t think of posting about it.  So the next night when we were having it for dinner I decided to at least take a picture of the food and the electric skillet, even though the food is on my dinner plate.  🙂

Holidays and Exercise Classes

I have been teaching Nia in the San Francisco Bay Area for two and a half years.  So far every Holiday that falls on one of my regularl class days, I have taught.  I keep seeing postings on Facebook, Twitter, and other places on the internet about how classes are suspended or cancelled over the Holiday weekend.  The classes will resume normal schedule on Tuesday.  I understand this because some of the places where the classes are taught are closed over the three-day weekend.  Also, a lot of people do go away during Holidays, but a lot of people stay home too.  I find that because I have morning classes, my holiday classes are bigger.  People that are normally at work get to come to a morning exercise class.  I love it.

I also understand that holidays are family time so it is nice to be with the family.  Especially since most of the time people are having to get up and rush off on their separate ways.  I am fortunate that my Monday and Wednesday classes in San Jose are at 9:00 am.  Often times people can come take the class and be back with the family before the family is even up and ready to go about the day.  AWESOME!

It seems as if the actual independence day was July 2, 1776, when the actual legal separation from Great Britain occurred.  The document clarifying and explaining what the meant was finalized on July 4th so it seems that was adopted as Independence Day.  In 1938, Congress changed Independence Day to a paid federal holiday.  This is all according to Wiki.

I feel it is nice to take a moment to remember why we have a day off.  Usually we are so excited by the fact we have an extra day to play we might forget why.  I know I do.  It really is my blog that helps me stop and remember.  On Holidays I often look up them up to see if I should or could post about them.  Today I decided to post a bit about it and about the fact that Help You Well / me has not taken a Holiday yet.  I post the information on my site too, so that my students know I will be there and people looking for a class will know.  Some people like to try a new class when they have the day off.

I am fortunate to rent the studio where I teach on Monday so I am not subject to a “company” being open or closed.  So I am there.  You can find me at the studio in San Jose.  Even though that is the one day when my hubby might be home and I have to get up and leave him, I am motivated by my students that show up that normally can’t attend on regular work days.  Come join me.

It’s a Mystery

Oh wow!  Last night we went to a mystery party.  It was so fun.  I really was just amazed at the craziness of the character and the twists and turns and just all that was going on.  Since this is a public blog, I don’t want to tell too much because I never know who is reading this and if you were invited to a mystery party with this story line and you got all the details here that wouldn’t be fun.  It was my first party like that and so I was a bit overwhelmed to say the least.

We were on a ship in the 1700’s and we all had goals to accomplish, with abilities, secrets, and information.  Oh and we had “items too”.  And EVERYONE was looking for something.  It was hilarious.  It was fun and I am telling you this because I was so involved in it I forgot to post a placeholder for anyone doing the Ten Minute Workout.  But alas, it doesn’t look as if that was a problem.

I just did mine, but I am going to tell you I actually took out the lunges.  Yes, yes, I know, one of the prime exercises to target the glutes, but it is my foot that I am trying to save.  I have been practicing a Nia routine called Sexi.  I am thinking about doing it this week and it has a lot of ball of foot.  A LOT!   So much so that I might wait until Wednesday to do it, so that I can do it once for my San Jose Nia Class and then once for my Los Gatos Nia Class.  Then have a few days where I am not doing it.  Then pick it up again the following week.   One of my students requested it.

Which reminds me:  YES, there is Nia in San Jose at 9 am on Monday, the Fourth of July.  So come on over.  Many people have that day off so join us.  It will be fun.  We will be doing Sexi!  And Sexi is sexy and fun.

Even though I didn’t do lunges I did target my glutes with the ol’ donkey kick.  But I added some weights to see how that worked.  Remember those donkey kicks?

It is much, much cooler in San Jose today.  I like it much better.  But I did do my ten minutes first.  And now I am going to spend a good portion of the afternoon with Nia.  I can’t decide whether to work on learning a new Nia Routine or brush up on one.  One of the cool things about Nia is that the more you do a routine the more you can play with it.  You can use flexibility, agility, mobility, strength, or stability (FAMSS) to infuse the workout and make it different every time.

I have notice that I can do that a bit with the ten minute workout too, because every time I do it I am different.  Today I really, really, really, really concentrated on taking LONG steps in the lunges and I was able to confirm why I chose this exercise for the workout to target a specific muscle.  I have also been experimenting with the way I hold the band for the triceps kick backs and bent over lateral raise.  So even though I have been doing the same exercises I have been doing them a little different to work it in different ways.  What about you?

Sneaky Monday

Oh my! I was just about to go to bed. Yes, up late as usual. I got caught up watching Calendar Girls. I had never seen it even though it is from 2003. So cute. I realized I didn’t post a placeholder and there is no way I can turn on my computer at this hour. I would never get to bed! So I am using my iPad which does not have all the needed functionality as a computer. Not all websites – and WordPress is one of them – behave noemally on the iPad. But this is just a place holder for you that want to check in.

I will be back to let you know I did my Ten Minute Workout. I will have to wait until I get back from my Nia Class to hear how you are doing with those ten exercises. Can’t wait to hear.

Ha!  Ok, I came right home after my San Jose Nia class.  And I only sat for about five minutes then I came upstairs and did my ten minute workout.  I wanted to get it done before it got too hot.  It is supposed to be really hot in the San Francisco Bay Area today.  I am not a fan of the heat so I know that if I wanted until it was hot I wouldn’t want to do it.  So I got it done, about an hour ago.  But I was replying to my friend’s comment.  As you can see my reply is very long . . . . it took me awhile.

Here I am, I am done and I am checking in.

Nia at Nine

Helloooooooooo.  I have my Monday morning San Jose Nia Class today at 9:00 am.  I am not a morning person, maybe you have figured that out from my posts.  By “morning person” I mean I don’t go bed by 10:00 pm and automatically wake up a 6:00 am or 7:00 am.  I CAN get up in the morning and I DO get up in the morning when I have a Nia class to teach.  I like to be up in enough time so that I can drink some coffee and review my routine.  I like to leave in time for me to get there fifteen minutes early.  So even though my Ten Minute Workout is only ten minutes I do not get up early enough to do it and all the other things I have to do.  I also don’t get up early enough to even turn on my computer. I am posting this after midnight before I go to bed.  I have made it a rule that I cannot turn on my computer in the morning on Mondays and Wednesdays because then I get caught up in doing work on it and I don’t get all that I have to get done before I have to leave to teach my 9 am Nia class.

On Fridays, my Los Gatos Nia class is late enough that I could get up and do my Ten Ten in Ten before, but at this point, by Friday my foot/toe is reminding me that it is still not 100% and so I “save” up my toe/foot for my class.  I want to give my Nia students 100% so I don’t do my workout before.  When my toe IS at 100% I will definitely do some exercising before my class because on Fridays I tend to get home in the afternoon and I have other things to do.  I end up not getting to the workout until way late.

Ha . . . all of this is really just a placeholder to allow you to check in and to tell you . . . . . . I WILL BE BACK!

This is a Wednesday “place holder” post.  I am going to teach my San Jose Nia class first then do my Ten Minute Workout.  Yes, I know it is only ten minutes, that is the beauty of it.  But I like to make sure I have all my “toe strength” (sounds silly, I know) for my class.

But I am posting so that YOU, Dear-Wonderful-Loyal-Reader/Exerciser, have a place to comment that you have done or not your ten minute workout.

When I have done mine I will post/edit/comment (not sure what yet).

Very late in the day, but I did it.  I finally resorted to taking an allergy pill.  I took something I had not taken before — Allegra (don’t worry I didn’t take it with fruit juice).  Like most medicines for allergies it makes me feel very, very, very lethargic.  But, I did it.  I was REALLY mellow on the lunges, I didn’t do them as I wanted to when I put them in this workout.  I am respecting my toes.
